Pumpkin is good for your little growing pumpkin(s) any time of the year...

I had been hearing some buzz earlier this week about pumpkin being a super food for expecting moms of multiplies. And then I had a request from a preggo Twitter pal for some recommendations for pumpkin recipes.

So, why is pumpkin considered such a baby bump all-star?  Pumpkin is a fabulous source of Vitamins A & C, fiber, chromium, and is rich in iron.  Expecting mamas carrying 2 or more babies need to eat foods that pack the most nutritional punch in the smallest packages (not much tummy room when you have 2 or 3 growing little ones in utero).  And if pumpkin is good for the pregger moms of multiples then it has to be good for mamas carrying just one. ;)

I know, I know.  Pumpkin is a fall food, right?  And it's spring!  But you can always find canned pumpkin all year round in your grocery's baking aisle with the pie fillings.  And who says you can only eat pumpkin during the fall months? ;)
So, here are a few recipes that I have researched and found to be simple, yet delicious.  Please note, none of these recipes are my own.  I have included links and pics of each dish.
