My 5 year old daughter and I are the only seafood lovers in the house. Which sadly means that I don't get to make seafood for dinner as often as I would like since half of my household won't eat it. However on evenings when my husband is working late & my son is over at his dad's, I like to treat my daughter & I to a special seafood dinner just for the two of us without a lot of prep and fuss. You can purchase just the amount of seafood that you need, and they will custom cut your fillets before seasoning them with your flavor combination of choice. This recipe serves two, but you can easily double or triple this recipe to serve more. Sweet Bourbon Salmon with Caramelized Onion & Parmesan Mashed Potatoes

Ingredients (Serves 2)
  • About 1 lb. of wild caught sockeye salmon (cut into 2 fillets) seasoned with Sweet Bourbon & butter from your Kroger Easy For You seafood department
  • 2-3 medium Simply Truth Organic Russet Potatoes, peeled and chopped
  • 1 tbsp unsalted butter + 1 tbsp olive oil
  • 1/2 of a small onion, sliced thinly
  • Pinch of salt, pinch of sugar
  • 2 tbsp unsalted butter
  • 1/2 cup milk
  • 1/4 cup Private Selection Shaved Parmesan Cheese
  • Salt & pepper, to taste
Instructions
Preheat your oven to 375 degrees.

Place the peeled & chopped potatoes in a medium saucepan and cover with water. Bring to a boil over high heat. Reduce to medium-high heat and continue cooking until potatoes are fork tender, about 15 minutes.

While the potatoes are boiling, prepare the caramelized onions. Heat the 1 tbsp of butter & 1 tbsp of olive oil over medium-high heat in a small saute pan. Once the butter is melted, add in the sliced onions and turn the heat down to medium. Continue cooking, stirring frequently. After 10 minutes of cooking, sprinkle with the pinch of salt & sugar. Continue sauteing until soft & golden brown, about 15-20 minutes total.

When the onions & potatoes are about halfway down cooking, place the Easy For You Oven-Ready salmon fillets packet on a baking sheet. Cook according to the package instructions. (1 lb. of salmon should take about 18 minutes to bake in the oven.)

Once the potatoes are fork tender, drain the water from the pot. Add in the 2 tbsp of butter and milk. Using a potato masher, mash the potatoes, butter, and milk until creamy. Stir in the Parmesan cheese & caramelized onions. Season with salt & pepper, to taste.

Once the salmon is done baking, plate each fillet. And a couple of scoops of the Caramelized Onion & Parmesan Mashed Potatoes. Serve with a freshly steamed or roasted veggie like baby carrots or asparagus, if desired. Enjoy immediately.
