Can we talk about raisins for just a quick second? In general, I don't like them. I mean, they have their place in the culinary world, but for me that wouldn't be straight from the box. Or baked into any kind of bread or bagel (oatmeal cookies though are a-okay with me ;) ). Or as part of a trail mix (I always pick around them). And especially not in my granola!

Do you know how difficult it can be to find a box of store bought granola that does not have raisins in it?? Nearly impossible. Believe me- I have tried. 

If you have an aversion to raisins in your morning granola like I do, then you are going to love the recipe that I am sharing with you all today! This homemade Pecan & Date Granola is brimming with toasted golden oats, crunchy pecans, & sweet dates.... and absolutely no raisins whatsoever! ;)

Now I get that some of you all may actually love raisins in your granola. And to that I say, to each their own. I actually think raisins would go pretty well in this granola recipe- you know, if I actually liked them in my granola and all. ;) Just swap out 1/3 cup of the dried dates for raisins, and voila! You have yourself a Pecan, Date, & Raisin Granola instead.

That is one thing that I really love about making homemade granola- you can totally customize it to your personal taste preferences. Not a fan of pecans? Try walnuts instead. Can't stand dried dates? Substitute in some tart dried cranberries or cherries. Want to use all natural sweeteners? Leave out the brown sugar & add in your favorite alternative sweetener. I upped the nutritional value of this granola by tossing in some chia seeds, but you can always omit them if you are not fan. When it comes to homemade granola, it is totally up to you and what you like. The flavor combinations are almost limitless!

Pecan & Date Granola

Prep Time: 5 minutes
Cook Time: 25 minutes
Ingredients (8-10 servings)
  • 1 large egg white, whisked until frothy
  • 3 tbsp honey
  • 3 tbsp coconut oil (liquefied) or canola oil
  • 1/3 cup brown sugar
  • 3 cups old-fashioned rolled oats
  • 1/4 cup chia seeds
  • 1/2 tsp ground cinnamon
  • 2/3 cup chopped pecans
  • 2/3 cup chopped dried dates
Instructions
Preheat your oven to 325 degrees. Line a baking sheet with parchment paper. Set aside.

In large mixing bowl, whisk together the egg white, honey, oil, & brown sugar until smooth. 
Add in the oats, chia seeds, cinnamon, & chopped pecans & stir to coat them evenly. 

Spread the granola mixture onto the prepared baking pan, and gently press it down into the pan in an even layer using the back of your spoon or a rubber spatula.

Bake until golden brown (about 20-25 minutes), turning the pan once about halfway through the baking time. Let cool completely, and then break it up into small clusters. Add the granola to a large storage container or bowl, and then fold in the chopped dried dates.

Store in an airtight container for up to one month.
