With peach season in full swing now, I am always trying to concoct new delicious ways of enjoying one of my favorite summertime fruits. As I was looking through my fridge the other day, I spied a bottle of peach moonshine (not the backwoods stuff, folks) we had picked up a few months ago & the wheels started turning. I have always wanted to try my hand at a boozy popsicle, so I thought why not a peach one?

These Peach Shinesicles literally have just 3 simple ingredients in them- fresh pureed peaches, peach juice, and peach flavored moonshine. Many liquor stores now carry moonshines or cordials cut with moonshine, but if you cannot find a peach flavored shine feel free to use a peach liqueur like Schnapps instead. Or if you happen have a bottle of the homemade stuff laying around, you could totally use that too. ;)

Frozen Peach & Cara Cara Orange Margarita

Ripe peach and sweet Cara Cara oranges come together in this refreshing Frozen Peach & Cara Cara Orange Margarita...

Ripe peach and sweet Cara Cara oranges come together in this refreshing Frozen Peach & Cara Cara Orange Margarita.

So, can we chat about Cara Cara oranges for a second? I literally just discovered the existence of this navel orange hybrid last month, and I have been hooked ever since. Like I want to make all the Cara Cara orange things now.

And why you might ask? Well, they happen to be a little sweeter and milder in acidity than traditional navel oranges. They also happen to be seedless which makes them perfect for juicing. And just look at what is on the inside when you slice one open. Such gorgeous color, folks!

Since patio sipping weather has just about arrived here, I thought why not use my new favorite citrus fruit in a frosty margarita? I combined fresh Cara Cara orange juice with ripe peach and fresh squeezed lime juice to make the perfect frozen peach margarita. You can rim your margarita glasses with salt or sugar depending on your taste preference.

Personally, I am all for the sweet & salty combo, so I opted for a salt rim with mine. But if you prefer a sweeter margarita, go for the sugar rim. I found that the natural sugars from the orange juice and fresh peach were just right for me, but my husband who prefers all things syrupy sweet went for the sugared rim for his frozen margarita...

Make a refreshing, fruity flavored iced tea in minutes with this Peach Mango Iced Tea for One. #TeaMoments #ad

I would say that on any given day there is almost always a pitcher of sweet iced tea chilling in my fridge. We are a family that loves our iced tea. But occasionally this mama gets busy and life happens, and we will go a day or two (or sometimes three) without a fresh pitcher of sweet tea to enjoy, and then one of us is bound to find ourselves wishing we had a glass with dinner. Or we will get a craving for a flavored iced tea. Or I will have a guest over for dinner or a cookout who prefers their iced tea unsweetened. This is why I am so glad that I recently discovered Lipton K-Cups. Lipton K-Cups allows me to easily solve all three of those little iced tea dilemmas in mere minutes!

Simply pop a Lipton K-Cup in your Keurig and brew over ice. It doesn't get much easier than that, folks. And making a fruity flavored iced tea for one is just as easy! But instead of regular ice cubes, you use fruit juice ice cubes like I did for this refreshing & fruity Peach Mango Iced Tea for One...

3 Simple Steps for Creating Summer "Me Time"

It is easy to create quality time for yourself with these 3 Simple Steps for Creating Summer "Me Time".
This is a sponsored conversation written by me on behalf of PEOPLE®, Real Simple®, and Southern Living®. The opinions and text are all mine.

While I definitely look forward to the kiddos' summer break each year, it also means that I have to be more creative with sneaking in little moments of "me time" each week. During the school year, I get at least 6 hours of full blown "me time" at least four days a week. But summers get trickier with my youngest being at home with me 24/7 every day but one day out of the week.

Giving up my "me time" during the summer months is definitely not an option. We all need to create a little time for ourselves each week to get re-centered, focused, & motivated. It's essential to my sanity and to my role as a mother, wife, homemaker, and full time food & travel blogger that also happens to work at home. It can be difficult to "get away" and recharge when you are always "clocked in" mentally.

So how do I find quality "me time" during the non-stop busyness of the summer months? It doesn't have to be elaborate or time consuming or require hiring a sitter. I keep it easy with these 3 simple steps...

This easy Spiced Rum Peach-Walnut Crisp is the perfect marriage of summer sweet peaches and the warm spices of fall.

Sometimes recipe inspiration just hits me while standing in the produce aisle at my local grocery store.

These huge gorgeous peaches caught my eye instantly. But I was sold when I saw the price per pound- just 99 cents!  I loaded up a bag of them, giddy with how amazing they looked and smelled.  I wasn't quite sure what I was going to do with them right at that moment, but I knew I was going to have make something amazingly delicious with them. ;)

As I was standing in the checkout line ready to make these peaches mine to take home, it occurred to me that I had a huge bag of beautiful walnuts from my friends at California Walnuts sitting on my counter. Before I had even swiped my card, I knew what I was going to bake these peaches into- a warm and comforting crisp.

I combined sweet, juicy peaches with the some of the warm spices of fall- cinnamon and cardamom. And for good measure, I poured a little spiced rum in there. ;) Then I topped it off with a spiced golden and crunchy oat topping brimming with big pieces of California walnuts.  The perfect dessert to segue from the bright, fruity flavors of summer and the warm, spicy flavors of fall...

In late spring of each year, I get down into the dirt and start planting seedlings and seeds in a spot in our backyard with dreams of having a garden brimming with homegrown veggies come July and August. And almost every summer, I am met with a little disappointment. A few tomato plants seem to do well early on, and then for what seems like no reason at all they just dry up and never produce another tomato. Pumpkin vines start sprawling through half my garden making me excited for all the fun (and free) pumpkins we would have in October only to have them bloom and produce cantaloupe sized pumpkins... in mid August. This year I decided that I needed a break, so we didn't plant a garden. Then a very strange thing started to happen late last month... plants just started appearing on their own.

First, it was the parsley plant I had dumped over the side of my deck railing at the end of last fall. It came back to life. Then it was a single pumpkin plant in what was my garden last year. And after a few good rains here the past couple of weeks, I now have an abundance of fresh, beautiful garden mint at my disposal. I have come to the conclusion that maybe I am better at accidental gardening than purposeful gardening. ;)
Now when I say I have an abundance of fresh mint, I am not exaggerating. I have a TON, folks. Since peaches are so affordable right now due to it being peach season, I knew I wanted to create a healthy and summer perfect recipe combining those sweet peaches with the refreshing crispness of the mint. And that is just what I did with this Peach-Mint Green Smoothie...

Sweet, juicy peaches come together perfectly with the bite of a good ginger beer and the smoky sweetness of KC Masterpiece BBQ Sauce Mix & Dry Rub Sweet Honey in these tender, flavorful slow cooked pork chops.
This is a sponsored conversation written by me on behalf of KC Masterpiece. The opinions and text are all mine.

While I have been grateful for the warmer weather here lately, we just can't seem to catch much of break with the rain. I seriously think it has rained almost every day of the week for the past few weeks save a day or two here and there. Needless to say, it has put a slight damper on our springtime grilling. Ever tried barbecuing in a downpour? It never works out very well for the person grilling or for the meat being grilled. ;)

So what is a girl to do when it just. won't. stop. raining, and I am craving some good BBQ? I break out my slow cooker and one of my new favorite KC Masterpiece BBQ Sauce Mix & Dry Rubs, & get down to work creating a slow cooked dish that has all the smoky goodness of backyard barbecue without the outdoor charcoal grill. Everyone stays nice & dry, and we still get to satisfy our barbecue cravings. I call that a win-win, folks.

For these Sweet Honey BBQ Peach-Ginger Pork Chops, I went all sweet and smoky with these babies. Sweet, juicy peaches come together perfectly with the bite of a good ginger beer and the smoky sweetness of KC Masterpiece BBQ Sauce Mix & Dry Rub Sweet Honey in these tender, flavorful slow cooked pork chops... :)

My Second Canning Venture- Vanilla Spiced Peach Jam

I bought a bag of gorgeous peaches for just $5 at the farmers market the other day.  I wasn't quite sure what I was going to do with them when I handed the lady at the market my $5 bill.  I just knew that they looked and smelled delicious, and that I had to have them.  Maybe my family and I would just snack on them throughout the week.  Maybe I would make a peach cobbler.  But then I thought, wait!  I have been wanting to try to make my very own jam.  Why can't peach jam be my first jamming adventure? ;)
I did quite a bit of research online trying to find what seemed like the perfect recipe for my first attempt in peach jam making.  After finding a few that appealed to me, I decided to take a little from this one, and a little from that one and make my own version.  I know that is typically a big no-no in the first time jam making world, but I rarely follow the culinary rules (what fun is that anyways?? ;) )  I figured if it flopped I would go ahead and use what I had made to concoct some kind of peach cobbler or crumble.  And well, if it was successful then I would share it with all of my readers.  (Lucky you all!)

What you will need:
6 large peaches- peeled, pitted, and chopped
Juice of 1 lemon
1 1/2 tsp vanilla extract
1 cup of sugar
1-2 cinnamon sticks (you could also just add 2 tsp of ground cinnamon)
1/2 tsp ground cardamom
Canning supplies- stock pot, processing basket, 8-10 4 oz glass jelly jars and lids, tongs, etc.

The first thing you need to do is get those peaches jam ready.  The easiest way I have found to peel the peaches is to do just about the same thing I do with tomatoes when I need them peeled quickly.  With a paring knife, cut an X into the bottom of each peach.  Then dump the peaches into a large pot of boiling water for about 1 minute.  Immediately drop the peaches into a sink of cold water with ice cubes.  Once they are cool enough to handle, the skins should just slip right off. Then you can cut each peach it half, pit them, and chop them.

Once your peaches are chopped and ready to go, dump them in a dutch oven or large pot.  Add in the lemon juice, vanilla, sugar, cinnamon stick(s), and cardamom and mix together.  Over medium-high heat, bring the mixture to a boil.  Then reduce the heat to medium and simmer for 15 minutes, stirring frequently.  At this point, take a potato masher and mash some of the peaches until your jam is your desired texture.  I like mine with slightly more chunk.  When you are done mashing, simmer the jam for another 10-15 minutes until it is thickened up.  Remove the cinnamon stick.

You know I had to share a couple of photos of my favorite little sous chef. ;)

Now you need those warm jam jars.  I boiled my jars and lids in a large stock pot and took them out of the water right before I was ready to fill them with my peach jam.  But you could also try the dishwasher trick I talked about in my A Few Tips From a Canning Novice to the Canning Newbies post earlier this week.  I know I am definitely trying that the next time that I do can.
Using your nifty funnel (if you bought the Ball Utensil Kit, you will have the exact same one pictured above), fill each of your jars to about a half inch from the rim.  You need to allow a little space in the top of each jar for any expansion that may take place turning the actual processing of the jars.  Remove all air bubbles from the jars by poking and stirring around a non-metallic utensil into each filled jar.

Now place a lid and band on each jar.  Do not tighten the bands all the way.  Place in a stock pot of simmering water, making sure the jars are covered with about an inch of water.  Place the lid on your pot and boil for about 15 minutes.  Turn off the heat and allow the jars to sit in the lidded pot for 5 minutes.  Then take them out and let them sit up on a cooling rack for at least 12 hours.  As you remove the jars from the pot, you should hear a little ping sound.  This means that your jars' lids have set and should preserve well on your cupboard shelf or in your pantry.  Those little ping sounds are pretty gratifying.  You know that you are doing something right. ;)

Once cooled, be sure to label each jar and include the date.   This recipe makes about 10 4 oz jars.
Vanilla Spiced Peach Jam

Traditional bread pudding is taken to a whole level of deliciousness with the addition of juicy peaches & a sweet basil cream sauce.

Post updated 8/28/18- These creamy Peach Bread Pudding with Sweet Cream Basil Sauce deserved some updated photos. I did leave one of the originals down below just so you all can see for yourself why this recipe so desperately needed a little face lift. ;)

I don't know how it is where you all are living, but it is peach season here and they are CHEAP. They have been on sale at our local grocery store for just 99 cents a pound for the past two weeks. Needless to say, we have been enjoying a lot of peaches in this house lately. I haven't heard a single soul complain though. ;)

When I started brainstorming what I wanted to create with some of these juicy peaches, I had these gorgeous day old (or maybe 2 or 3 day old, but who's counting?) rolls that I needed to use asap...

Peach, Basil, & Caramelized Onion Homemade Pizza

It is prime peach season around here.  The local farmers markets stands are starting to brim with bags and bushels of the juicy fruit.  Lately, I have had an obsession with making homemade pizza.  I blame my nifty little bread maker and how incredibly easy it has made it for me to make pizza dough from scratch at home.  I love just dumping in the ingredients and then walking away for about an hour and a half. ;)  So combine my new found love of from scratch pizza and the seasonal freshness of local peaches, and you will find my inspiration for my Peach, Basil, & Caramelized Onion Homemade Pizza.  Plus, I needed an excuse to do something fun with the peach white balsamic vinegar I got in my June Foodie Penpals package. ;)

What you will need:
For the crust-
1 cup of warm water
2 tbsp of olive oil
1 tbsp of honey
3/4 tsp salt
2 cups white flour
1 cup wheat flour
2 tsp active dry yeast
1-2 tbsp of cornmeal for dusting
* I adapted my pizza dough recipe from the one found HERE.

1/2 large onion, thinly sliced
1 tbsp of olive oil, then 2-3 more tbsp to brush on the dough later
1 tbsp butter
1 tsp salt
1 tbsp of sugar
3/4 cup peach balsamic vinegar (regular balsamic vinegar can be used as well)
1/2 cup of fresh basil leaves, thinly sliced
1 large peach, pitted and sliced thinly
8 oz of fresh mozzarella, sliced

Start your dough in the bread maker about an hour before you are wanting to start putting together the toppings for your pizza.  Make sure you dump in the wet ingredients, then the dry ingredients just like in the order that I have them listed above.  Set your bread maker to the Dough setting and let it go! :)

When your bread maker has about a half hour left on it for your dough, go ahead and start the toppings for the pizza.  Heat the olive oil and butter in a small frying pan over medium heat.  Once butter is melted, add your thinly sliced onions.  Let the onions hang out, mixing and turning them occasionally.  Do not raise the heat above medium because you think it will make them cook faster.  You are wanting them to caramelize and get sweet and get brown.  But you do not want them burnt.  This should take about 15-20 minutes total to happen.  After they have cooked for about 10 minutes, add the sugar and salt to the onions and continue to cook.

While the onions are cooking down, slice your peaches.

In the end, this is what your caramelized onions should look like.  Nice color, huh? ;)

After you have sliced your peaches and while the onions are still caramelizing, start your balsamic reduction.  The reduction is pretty easy to make, but you need to make sure to stir and check it often so it doe not reduce too much and become too thick.  Just heat the vinegar over medium heat, allowing it to come to a boil and stirring often.  Keep checking it and stirring until it is reduced down to about a 1/3 of a cup.  Next slice your fresh mozzarella into about 1/4 inch slices.

Once the dough is ready, take it out of the bread maker and dust it with the cornmeal.  Work it onto a smaller baking sheet or a pizza stone or pan.  Brush the crust with the olive oil.  Then add your mozzarella, peaches, and caramelized onions.  Drizzle the whole thing with your balsamic reduction.  You will bake your pizza at 425 degrees for approximately 20 minutes.  When there is about 5 minutes left in the baking time, sprinkle your sliced basil leaves over the top and continue baking it for the last few minutes.

I really love this pizza for it's combination of sweet and savory.  It is a nice change of pace from our usual red sauce, pepperoni, and cheese.  And you cannot beat the freshness of the peaches and basil this time of year.  :)

Who says popsicles are just for the kiddos? ;) Not this mama! In fact, one of my favorite adults only treats to make during the hot summer months are boozy ice pops. It is so much fun to transform a favorite fruity cocktail into a frosty treat perfect for beating the heat with.

Some of you all may remember my Peach Shinesicles from a couple of summers ago. Those ice pops combined juicy peaches with my favorite peach flavored liqueur. These refreshing Watermelon Mojito Ice Pops happen to be inspired by one of my all-time favorite summertime cocktails- mojitos!

I combined fresh watermelon with mint, tart lime, & rum to make these mojito inspired popsicles. They will make the perfect poolside treat or a refreshing ending to a backyard BBQ...
