Chicken & Grape Salad {A Guest Recipe from Organized Island}

Hello Everyone! My name is Raquel and I blog over at Organized Island. I am a mom to two grown kids and I know how quickly time goes by. That being said, I love to share tips and recipes that save time in the kitchen, so that more time can be spent with people we love, since I believe that the simple moments together make the best memories. A few years back, I was a productivity manager at a financial institution, so I tend to streamline processes when I can. Today I am sharing an easy recipe for spring and summer. It is a chicken salad recipe that I have been making for years with grapes to add some crunch, without the need for nuts. Of course you could add nuts if you want to, slivered almonds or walnuts work well. If I really want to save time, I will use a rotisserie chicken in this recipe.

Chicken & Grape Salad 
3 cups cooked seasoned chicken, chopped 1/2 cup mayonnaise,  1/2 cup sour cream,  1/2 cup onion, chopped 1/2 cup celery, 1/2 teaspoon lemon juice,  1/2 teaspoon salt,  1/4 teaspoon pepper 

Combine all ingredient except chicken in a bowl and mix well. Add chopped chicken and chill at least 1 hour. This salad is great in a sandwich, served with crackers or on a bed of fresh vegetables.
