Baby Cakes {& A GoodCheapEats Cookbook Giveaway}

When I get the opportunity to check out a new budget friendly cookbook, I always jump at the chance.  Even though I love browsing Pinterest and other food blogs for recipe inspiration that is also easy on the wallet, there is just something about flipping through the pages of an actual physical cookbook.  Am I right on this, folks? ;)

Some of you all may already be familiar with Jessica, the lovely author of the GoodCheapEats cookbook  from her two popular blogs- Life As Mom and Good Cheap Eats. If not, then please let me introduce you to her and her newest cookbook! (Did I mention this is cookbook #3 for her??)
Good Cheap Eats (the book) is inspired by Good Cheap Eats (the blog), which Jessica published for five years to help families and busy parents find better ways to get economical and healthy meal options on the table without sacrificing good taste or good nutrition. The book follows this theme, with over 70 two- and three-course meals (200 recipes) that feed a family of 4 for $10 or less. Along the way, she has included over 100 tips for stretching grocery budgets, making ingredients go farther, and getting the most flavor from budget-friendly ingredients.

Although, I cannot share all my favorite recipes from the cookbook with you all, I can share this one. Her recipe for these simple, yet perfectly soft Baby Cakes...

Baby Cakes

Prep Time: 10 minutes
Cook Time: 8-10minutes
Ingredients (3 dozen cookies)
  • 1 cup sugar
  • 3/4 cup (1 1/2 sticks) butter
  • 2 large eggs
  • 1 tsp pure vanilla extract
  • 2 1/2 cups unbleached all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp fine sea salt
  • 1/2 cup small candy pieces, such as candy-coated chocolates, chopped candy bars, or crushed toffee
Instructions
Preheat the oven to 350 degrees. Line two baking sheets with parchment paper or silicone baking mats.

In a large bowl, cream together the sugar and butter. Add the eggs and vanilla and beat until well combined.

Stir in the flour, baking powder, and salt. Fold in the candy.

Scoop the dough into rounded tablespoons and place 2 inches apart on the prepared baking sheets.

Bake until firm and beginning to brown, 8 to 10 minutes. Cool on a rack before wrapping in plastic wrap or storing in individual zip-top plastic bags.

MAKE IT AHEAD: Layer the cookies in an airtight container and store at room temperature for up to 1 week or in the freezer for up to 1 month.

I honestly had no clue which recipe from GoodCheapEats I wanted to try first. But after an especially trying day, I decided that a homemade cookie baking session with baby girl was in order.  Jessica's recipe for Baby Cakes was perfect! We had everything on hand to make these, and they were so simple to make as well.  We ended up using mini chocolate chips in our baby cakes, but you can use whatever you have on hand.  This would also be an excellent recipe to save for after Halloween when you have all that candy that needs used up. ;)
