The Easter Bunny is going to be making his rounds a little earlier this year than normal, but we are ready for him in our house. The soon-to-be treat filled baskets are ready to be assembled. Extra eggs have already been procured from the local farmers' market. And the Easter dinner menu is currently being planned as I type this. 




One part of our Easter menu that is already handled & planned out is the dessert. The youngest and I will be whipping up a batch of these super fun Easter Egg Hunt Rice Krispies Treats. :)





These bright and cheery Rice Krispies treats are inspired by one of our favorite things to do with Little Miss each spring- the city's annual Easter egg hunt at the local park. Kiddos from all over our hometown gather in excitement at the city park with baskets in hand. 




The egg hunt is sectioned off by age groups, and when the whistle is blown the kids go wild! They are all on the hunt for the handful of golden eggs in the field. Finding a golden egg means you get an extra special prize from the Easter bunny. We haven't snagged a golden egg yet, but I have a feeling this year is the year, folks. ;)





Golden egg or not, everyone gets to be a winner with these Easter Egg Hunt Rice Krispies® Treats...

Easter Egg Hunt Rice Krispies Treats

Prep Time: 20 minutes
Cook Time: 5-10 minutes
Ingredients (Serves 12)
  • 3 tbsp unsalted butter
  • 1 package (10 oz) Kraft Jet-Puffed Marshmallows (I used the miniature ones for quicker melting.)
  • 6 cups Rice Krispies® cereal
  • 16 oz canister of your favorite vanilla icing
  • Green food coloring
  • Small sugar or candy flowers
  • Small egg-shaped candies
Instructions
Line a 13x9-inch baking pan with parchment paper making sure to leave at least a 1 inch overhang of the paper on each side of the pan. Spray the parchment paper with cooking spray. Set aside.

In a large saucepan, melt the butter over low heat. Add in the marshmallows & stir until completely melted. Remove from the heat, and stir in the Rice Krispies® cereal until well coated.

Using a buttered spatula or another piece of parchment paper or wax paper, evenly press the mixture into the parchment lined baking pan. Allow to cool completely.
Once cooled, use the parchment paper to transfer the Rice Krispies® treats to a cutting board. Remove the parchment paper.

Mix together the vanilla frosting and green food coloring (I used about 3 drops to get my desired shade of green.). Using about 1/4 of the frosting, frost the top of the Rice Krispies® treats with a base layer of the green frosting. Then using a pastry bag and a grass/fur (#233) decorating tip, top that base layer with frosting grass making quick, short strokes. Once the treats are completely covered with frosting grass, decorate with the candy flowers and egg-shaped candies being sure to tuck the candies into the "grass".

Cut into 12 servings. Best if served the same day.

To make the frosting grass for these Rice Krispies® treats, use a grass/fur decorating tip. This tip will have a bunch of small holes in it. I used quick, short strokes to make the frosting look more grass-like.

You can typically find small sugar or candy flowers in the baking aisle of your local grocery store or in the cake decorating section of your favorite craft store. Carefully place the flowers evenly on top of your frosting grass being sure to leave some room for "hiding" the egg-shaped candies.
