Who says popsicles are just for the kiddos? ;) Not this mama! In fact, one of my favorite adults only treats to make during the hot summer months are boozy ice pops. It is so much fun to transform a favorite fruity cocktail into a frosty treat perfect for beating the heat with.





Some of you all may remember my Peach Shinesicles from a couple of summers ago. Those ice pops combined juicy peaches with my favorite peach flavored liqueur. These refreshing Watermelon Mojito Ice Pops happen to be inspired by one of my all-time favorite summertime cocktails- mojitos





I combined fresh watermelon with mint, tart lime, & rum to make these mojito inspired popsicles. They will make the perfect poolside treat or a refreshing ending to a backyard BBQ...

Traditional mojitos are made with fresh mint leaves & lime wedges that are muddled with a simple syrup. Since no one is going to much like biting into a whole mint leaf while enjoying an ice pop, I decided to whip up a mint infused simple syrup to make these with instead.





The mint simple syrup is super easy to make & can be stored in the fridge for weeks. And while you can definitely use it to just keep making these mojito ice pops on repeat this summer, there are other things you can use this infused simple syrup in...




  • Skip the fresh mint leaves & just use this simple syrup instead when mixing up mojitos for your next summer get-together.
  • Sweeten & flavor iced tea with it with for a refreshing twist.
  • Use it as a simple dressing for a fresh fruit salad.
  • Mix it with espresso, chocolate syrup, & ice to make an iced peppermint mocha.
  • Use it to sweeten a homemade fruit sorbet or granita recipe. Think peaches, watermelon, mango, etc.

If you would love to make a non-alcoholic version for the kiddos, you could swap out the rum for club soda or just add a little more watermelon before blending. Just make sure you use different sets of popsicle molds so there is no confusion between the ones for the kids & the ones for the grown-ups only. ;)

Watermelon Mojito Ice Pops

prep time: 8 hours cook time: 5 min total time: 8 hours & 5 min

ingredients:

For the mint simple syrup
  • 1 cup water
  • 1 cup sugar
  • 1 handful of fresh mint leaves, torn
For the ice pops
  • 2 cups of seedless watermelon, removed from the rind & chopped
  • 1/4 cup white rum
  • Juice from 1 lime
  • 2 tbsp of mint simple syrup

How to make Watermelon Mojito Ice Pops

For the mint simple syrup
  1. In  a small saucepan, combine the water & sugar. Heat over medium-high heat, whisking until the sugar is completely dissolved. Remove from the heat.
  2. Place the torn mint leaves in the bottom of a glass pint jar. Using a funnel, pour the warm simple syrup over the leaves. Place the lid on the jar & give it a shake. Let it cool to room temperature, & then place it in the fridge overnight. Using a fine mesh strainer, strain out the leaves & discard. Pour the mint simple syrup back into the jar. You can store this is the fridge for 3-4 weeks.
For the ice pops
  1. Place the chopped watermelon, rum, lime juice, & mint simple syrup in a blender. Puree until smooth. Pour evenly into 4 popsicle molds. Freeze overnight or until set.
  2. Enjoy!
