The only thing that I love more than a good slow cooker recipe is a slow cooker recipe that requires just a handful of ingredients and very little prep. ;)







That is why I went on a quest to find some of the best slow cooker dinner recipes out there that need only 6 ingredients or less.  And most of these recipes are just dump it in, give it a mix, and forget it! 







I mean, can it really get any better than that when it comes to a tasty slow cooker dinner?

I am kicking off Slow Cooking Through Summer Week by sharing this super simple & delicious Slow Cooker Vodka Pasta Sauce recipe with you all.
If you are a fan of the jarred vodka pasta sauce, then this homemade, slow cooked version is going to knock your socks off! 

And you really cannot get much easier than this for a weeknight meal- the sauce is pretty much ready when you walk in the door. Just boil your favorite pasta and add a fresh salad to make the meal complete.  Easy, peasy! :)

I left the sauce chunky because I love the bits of tomatoes in this, but if you prefer a smoother sauce you can hit the sauce with your immersion blender while it is still in the slow cooker crock...

I use my slow cooker all year-round, but summers are really made for slow cooking.  
They keep the kitchen cooler on hot summer days because you can give the oven and stove the day off.
And just about any slow cooker recipe allows you to just throw it all in and forget it, leaving you free to enjoy a day in the sun poolside.
And bonus? You still get to come home to a slow cooked, delicious meal already prepared and ready to dish out!
