I can't even tell you all how excited I am about the arrival of grilling season. I mean, I have been looking for just about any reason to get outside of the house and out on my back deck at this point. Any reason. Not that doing a little grilling is a hard sell for me at all.





One of my absolute favorite recipes to make on the grill is a classic beer can chicken. It is so easy and simple to make. A little olive oil, a good seasoning mix, a can of beer, and a hot grill are all that you need to pull off this impressive whole grilled chicken recipe.





Recently, I discovered McCormick Grill Mates Seasonings & Marinades at my local Walmart. With flavor profiles like Roasted Garlic and Herb, Brown Sugar Bourbon, and Mesquite, I thought why not take my usual beer can chicken recipe to a whole other level of seasoning?

Loaded Smashed Potato & Beer Soup

I have always been a fan of homemade baked potato soup.
What I have not been a fan of is the actual baking of the potatoes.  I mean, it can take over an hour for them to bake & be done all the way through. 
And then you have to wait for them to cool enough to be able to handle them...
Ain't nobody got time for that! Especially on a busy weeknight, right? ;)

So, I had to find a tasty solution one busy, time crunched evening when I was just craving a good homemade baked potato soup.
Forget baked!  Let's do smashed potatoes! 
And while we are at it, let's throw a little beer in there.  I did say it is loaded smashed potato beer soup, didn't I? ;)

Butternut Squash Cheddar Ale Soup

The craft beer selection in my hometown makes me sad.  I live in a small rural area where Budweiser and Miller Lite reign over dueling kingdoms.  The demand for good, small batch brewed beers doesn't exist where I live now.

And I am spoiled.
I lived in a big Midwestern city for nearly 9 years.  There was craft beer EVERYWHERE.
Local breweries were popping up around the corner and across town.
You didn't have to find a specialty store to buy good beer- they sold it in the beer caves of the local grocery stores.
Then I lived near Pittsburgh for about a year.  Again, it wasn't difficult to find good beer.

I love good craft beers.  I love drinking them.  I love cooking and baking with them.
Julie from This Gal Cooks & I decided on fall beers for this month's Spiked! Recipe Challenge ingredient.  
I was excited and also a little bummed...
I wasn't sure what I would find at the local beer stop that would fit into the fall beers category.  
I walked in and was literally trying to decide between what seemed to be my only two options- one pumpkin beer and an Oktoberfest.  
And then I spotted the Blue Moon Brewmaster's Seasonal Sampler! 
Thank goodness- it afforded me not one, but FOUR fall seasonal brews- jackpot!

I knew I wanted to make a beer cheese soup, but I couldn't just make beer cheese soup. That would be too easy. ;)
I took it one step further and truly gave it a seasonal kick with a little roasted butternut squash.  I decided to go with the Blue Moon Short Straw, a red ale flavored with coriander and white pepper.  I knew those flavors would pair perfectly with the squash and cheddar.

Butternut Squash Cheddar Ale Soup

Prep Time: 10 minutes
Cook Time: 30 minutes roasting time, plus
Ingredients (6 servings)
  • 1 small butternut squash
  • olive oil, salt, & pepper
  • 1/2 cup chicken broth
  • 1/2 medium onion, diced
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 2 cups chicken broth
  • 12 oz bottle of fall/harvest ale
  • 1 bay leaf
  • 1 tbsp whole grain Dijon mustard
  • 2 cups shredded cheddar (I used mild.)
  • 1 cup half & half
  • 2 tsp cornstarch
  • Bacon for garnishing (optional)
Instructions
Preheat your oven to 400 degrees. Cut the top off of your squash and then cut it in half lengthwise. Clean out the seeds and pulp from each half.
Place the squash halves flesh side up on a baking sheet. Brush each half with olive oil and then season with salt & pepper.
Roast in the oven for about 30 minutes, or until fork tender.
Set aside and let cool.

In a dutch oven, heat the olive oil and butter over medium heat. Once the butter is melted, add in the diced onions and saute until tender, about 3 minutes.

Pour in the chicken broth and beer. Let simmer for 5 minutes.

While this is simmering, scoop out about 2 cups of the roasted butternut squash and place it in a blender or food processor. Add in the 1/2 cup of chicken broth and puree.
Pour the butternut squash puree into the chicken broth/beer mixture in the dutch oven and mix well.

Add in the bay leaf and Dijon mustard. Cook another 10 minutes.

Stir in the shredded cheddar until completely melted.

In a small bowl, whisk together the half & half and the cornstarch. Quickly whisk this into the soup.
Cook another 3-5 minutes until the soup has thickened slightly.

Ladle into bowls and top with crispy bacon if you would like.
Enjoy!

Spiked! American Craft Beer Recipe Challenge

Julie & I have teamed up to bring you all a recipe challenge with a twist (of lime or lemon, if you please ;) )- your recipe must feature the alcoholic beverage being spotlighted that month! Every two months there will be a new Spiked! Recipe Challenge with a new featured boozy beverage.  July's featured ingredient is....  American Craft Beers!  Julie and I are not shy about the fact that we are both beer snobs.  Plus, going with American craft beers is a nod to our country's Independence Day celebration in just a few days.;)

So what exactly is an American Craft Beer?  According to the Brewers Association, the definition of a true American craft beer is that the production is small (less than 6 million barrels of beer produced annually), it is independent (aka, not majority owned by a major brewing company), and is made from traditional brewing methods. So by definition that rules out your Budweisers, Miller Lites, & Coors (sorry, folks!).  

Not sure if the beer you are considering using in your recipe is a craft beer?  Go local. :) Small, local breweries are almost always considered craft beer producers.

Slow Cooker Beer Braised Pot Roast


A few weekends ago, my family and I headed out for the day to go do one of our favorite fall family traditions- visiting a farm a couple of hours away and spending the day there picking apples and pumpkins, taking hayrides, and navigating the corn maze.  Before we packed up the car and headed out, I started dinner.  Yes, I started dinner at 10:30 in the morning.  I love my Crock Pot.  I do.  It gets so much use and love especially during the fall and winter seasons.  On this particular day, I wanted to make a lovely roast I had picked up from my local farmers market the weekend before.  So, I browned the roast, cut up the potatoes, and dumped everything into the Crock Pot.  We came home over 8 hours later to dinner being ready and the house smelling delicious.

What you will need:
1 beef roast (about 2- 2 1/2 lbs)
Salt & pepper
1-2 tbsp of olive oil
12 oz bottle of beer, room temperature (The darker & more complex the beer you use, the deeper the flavor.  I used a bottle of Kentucky Bourbon Barrel Ale.)
3 cloves of garlic, smashed and chopped
1 1b. of potatoes (I used Rose Finn Apple Fingerlings, but any small potatoes will work- I cut some of the larger of the potatoes in half.)
About 2 cups of baby carrots
1 package of dry onion soup mix

Heat the olive oil in a large skillet over medium-high heat.  Season the beef roast with the salt and pepper. Once oil is heated, add the roast to the skillet and brown well on each side.

Layer the carrots and potatoes on the bottom of your Crock Pot.  Place the browned roast on top.  Sprinkle the garlic and the soup mix over the roast and vegetables.

Now comes the good part. ;)  Pour the beer over top of all of this.
Cook on Low for 6-8 hours.  
I made a delicious brown beer gravy to pour over the roast.  This is completely optional, but it is so crazy easy to make that you had might as well just do it...
Melt 2 tbsp of butter in the skillet that you browned the roast in (don't wash it, okay?).  Once melted, whisk in a few tablespoons of flour.  Let this cook while whisking for about a minute.  Take a few ladles of the sauce that has been slow roasting in your Crock Pot all day, and add it to the butter/flour mixture in your skillet.  Continue whisking until smooth and thickened.  Season with salt and pepper to taste.  Spoon generously over your sliced roast. 

It was so nice after a long day of being outdoors and driving to come home to a delicious home cooked meal just sitting there in the Crock Pot, ready for us when we walked through the door.  The roast was tender and fell apart with a touch of the fork.  And the beer offered so much flavor to everything!
