Even though I put together this little round-up of delicious desserts with a certain upcoming romantic holiday in mind, I am here to tell you all that this collection of desserts for two isn't just for the love birds or romantic date nights at home. I mean, recipes for desserts for two can have so many other perfectly acceptable uses. 







Like, you have had a really long week. Like really long. And you want to splurge on a sweet treat, but find the idea of eating an entire pan of brownies or a dozen cookies a little ridiculous.







Or maybe you are in the mood for a sweet treat, but don't feel like having a ton of leftover cake or cobbler tempting you all weekend long. 
I mean, it is hard to let such tasty goodies just go to waste, right?

Sweet & Spicy Sriracha Dipping Sauce {+ a P.F. Chang's Date Night-In}

Although I try to meal plan almost every week, there always seem to be at least a few evenings each month when I don't have a dinner plan in place. Or I forgot to defrost meat for what I did have planned. 





Or what I did have on the meal plan for that evening isn't appealing to me that day for some reason. Or by the time 6:00 rolls around, I am out of steam for the day & just want something easy to make. 





For all of the above reasons, I try to have a few easy & quick dinner solutions tucked away inside my freezer. Meals that can be quickly defrosted or cooked or baked and that require minimal prep on my part. 





Recently I discovered P.F. Chang’s Home Menu items in the freezer aisle of my local grocery store (available in your grocer's freezer aisle nationwide), and I am smitten, folks. They now have a permanent place in my freezer as one of my new favorite quick meal solutions.





The other day I picked up the P.F. Chang's Home Menu Orange Chicken and their Chang's Cream Cheese Wontons. I decided to whip up a quick flavorful dipping sauce for the wontons. Golden honey and bold sriracha sauce come together in this delicious & quick Sweet & Spicy Sriracha Dipping Sauce. And though I call this a dipping sauce, it is also fabulous poured over plain rice... ;)

As much as my husband & I have tried making at least two date night-outs happen every month, we haven't always been very successful at that. Mainly because life is life, and it is a known fact that it often gets in the way of even the most well intended plans. 

Most times it is the unpredictability of my husband's job that undermines even our most well thought out date night plans. Anyone else have a husband who works in sales? Namely selling cars? ;) Then I have a feeling that you ladies can definitely feel me on this one. 

Quitting time may be 5:00, but not when he is in the midst of a potential new sale and a decent commission is at stake. Does that mean that he & I just scrap our date night plans when he comes home just a little too late to make a dinner out happen? Nope! We like to keep a few ideas ready in our date night-in arsenal.

Sometimes my husband and I like to go down to the little local coffee shop in town and have a coffee and dessert date. But on evenings that we can't make our usual coffee date out happen, I thought why not bring the fancy coffee shop to our house instead? And it is so easy when I pick up some Breyer's Gelato and a few canned espresso drinks from my local Target. With just two ingredients and a few minutes, my husband & I are lounging on our deck on a summer evening sipping on a couple of creamy and decadent Mint Chocolate Affogato Floats... ;)

Pizza Picnic & A Movie- Date Night-In on a Budget

Date nights out sadly do not happen very often for my husband and I.  Budget constraints (just one of the drawbacks of being a single income family), time constraints (my husband works retail, so weekends are usually out for us to go out), and our two year old daughter (who is presently going through a "mommy do it" & apparently no one else can phase) have ensured that date nights out for my husband and I are few and far between.

But that doesn't mean we have thrown in the towel and don't try to make time for each other... ;)
What's the solution?
Date nights in that are easy on the wallet & can easily happen when the little one is napping or has went down for the night.

Last week I went to Walmart with the goal of creating a fun and delicious date night-in for my husband and I for under $15.  And guess what, folks? I succeeded!
Yep- delicious, pizzeria style pizza, a bottle of red wine, a movie rental, and even ice cream for two for less than $15.
