Okay, so I first posted this recipe WAY back in the day. Like in December of 2012. And I have finally decided 4 years later that it was about time that this little gem got some shiny new photos before Christmas. ;) 








Honestly, this post was far overdue for a little photography face lift. I had meant to do it last December (and the December before that), but you know... the holidays caught up with me and I ran out of time. But this year? I made the time, you all. 








The new photos definitely do these festive Rice Krispies treats justice! Not that the old ones were too terribly bad (you can take a peek at one of the original photos from my 2012 post below). 








But I am glad that I finally gave this recipe post a snazzy new update just in time for Christmas this week. Because we all need to have at least one quick & festive sweet treat recipe up our sleeve for that last-minute holiday party or get-together. Am I right, folks? ;)

Peppermint Hot Chocolate Krispies Treats

A classic no-bake treat get a festive twist perfect for the holidays in these Peppermint Hot Chocolate Krispies Treats.

prep time: 10 min cook time: 5 min total time: 15 min

ingredients:

  • 5 cups of Rice Krispies cereal
  • 1/4 cup unsalted butter
  • 10.5 oz. bag of peppermint flavored marshmallows (reserve 1 cup for topping the treats)
  • 9 tbsp of hot chocolate mix or 4 packets of instant hot cocoa mix (I used a very good quality organic hot chocolate mix. The better the quality of chocolate, the deeper the cocoa flavor of the treats.)
  • Crushed candy canes (optional)

instructions:

How to make Peppermint Hot Chocolate Krispies Treats

  1. Spray a 8 x 11.5 glass pan with cooking spray. Set aside.
  2. In a large pot or dutch oven, melt the butter over medium heat. Once melted, stir in the peppermint marshmallows. When the marshmallows are melted, add your hot chocolate mix. Heat for just a minute until combined.
  3. Remove from heat and add in the Rice Krispies. Stir until all the cereal is coated with the chocolate marshmallow mixture.
  4. Spread into your prepared pan. I find it is easiest to spread the krispies mixture into the pan using a piece of waxed paper on your hand. Sprinkle the reserved marshmallows and crushed candy canes over top of the pan of hot cocoa treats. Gently press them with the back of a wooden spoon or your waxed paper hand.
  5. Let cool completely before cutting into squares.
  6. Enjoy!

My family really enjoyed these.  They are perfect if you are looking for a last-minute and festive dessert for a holiday get-together! (And I am sure that the fat man in the red suit would appreciate these with his glass of milk on Christmas Eve. ;) )
