One of my favorite flavors of summer has to be juicy, straight from the vine tomatoes. Tomatoes just never taste as good as they do right now.  They are in season and the varieties are plentiful.  

And though I love a good homegrown tomato, I seem to have very little luck myself growing them. But fortunately for me, my local farmers market was just teeming with freshly picked tomatoes in vibrant reds and oranges this past weekend.  I snatched some up for a recipe that caught my eye on the Yahoo! Food site a few days earlier.

Summer Tomato Salad with Greens

Prep Time: 10 minutes
Cook Time: 5-10 minutes, depending on type of pasta
Ingredients (2-4)
  • 2 ½ pounds of the ripest tomatoes you can find (a mix of varieties is really nice)
  • 2 loose handfuls of tender young arugula or flavorful greens of your choice (about 2 cups, but whatever)
  • ¼ cup shaved red onion or shallot, as thin as you can cut it
  • 1 pound spaghetti or linguine
  • Extra-virgin olive oil, to taste
  • Salt and pepper, to taste
  • Red wine vinegar, to taste (optional)
  • Parmesan cheese, to taste (optional)

When you have ingredients this gorgeous and fresh and flavorful, you don't want to mess with such a good thing too much.  That is why I just love this simple, no fuss recipe for the Summer Tomato Pasta with Greens from Yahoo! Food.  The only thing that I added to this recipe was a handful of chopped fresh basil tossed in with the arugula.
