Loaded Baked Potato Grilled Cheese

What says comfort food better than a good ole-fashioned grilled cheese? 
How about a grilled cheese stuffed with even more comfort food goodness like bacon and mashed potatoes? ;)  Yep, you heard me right, folks. I have taken the classic grilled cheese to a whole other level of cheesy amazingness with today's recipe.

A lot of foods top my ultimate comfort foods list- creamy rice pudding, a perfectly cooked risotto, grilled cheese and tomato soup, and a hearty baked potato loaded with my favorite toppings... 
And I found a way to combine at least two of these into one fabulous sandwich with this Loaded Baked Potato Grilled Cheese! :)

But first, I had to head to my local Walmart to pick up everything I needed for this wonderfully cheesy comfort food goodness...

I combined these three trusted ingredients with some leftover mashed potatoes, a little crispy bacon, and a sprinkle of fresh green onions, and voila! Say hello to your new favorite grilled cheese sandwich- my Loaded Baked Potato Grilled Cheese...

Loaded Baked Potato Grilled Cheese

Prep Time: 5 minutes
Cook Time: 5 minutes
Ingredients (1 sandwich)
  • 2 slices of Wonder Bread
  • 2 tbsp Blue Bonnet Spread
  • 1/2 cup mashed potatoes
  • 2 slices of cooked bacon
  • 1 slice of Kraft Singles or Natural cheese slices
  • Green onions, chopped
Instructions
Heat a small skillet over medium-high heat.

Butter one side of each of the 2 slices of Wonder Bread with 1 tbsp each of the Blue Bonnet spread.
Place a 1/2 cup scoop of mashed potatoes onto the un-buttered side of one slice of bread. Spread it evenly over the bread. Add 2 slices of cooked bacon, a sprinkle of chopped green onions, and 1 slice of Kraft Singles or Natural cheese over top of the mashed potatoes. Place the other slice of bread on top, buttered side up.

Grill in the heated skillet until lightly golden brown, cooking about 1 1/2 -2 minutes per side.
Slice in half and then serve immediately.
