This easy to make Lox, Stox, & Triscuit is the perfect quick appetizer for a weekend brunch or an afternoon get-together... or just because. ;)
Lox, Stox, & Triscuit
Prep Time: 5 minutes
Cook Time: None
Ingredients (1 serving)Suggested serving size is two topped crackers per person
- 2 Triscuit crackers
- 2 tbsp onion/chive cream cheese spread
- smoked salmon (4 small pieces)
Spread 1 tbsp of the onion/chive cream cheese spread onto each Triscuit cracker. Then top the spread with 4-5 capers. Finish each cracker off with 2 small pieces of smoked salmon.
Serve & enjoy!

In another life when I was still a single mama to one and lived in a much bigger city, I used to meet one of my very good girlfriends at a corner deli and cafe for breakfast or brunch at least once a month. This particular corner cafe wasn't fancy, or hip, or posh. But they served damn good coffee and this delicious Lox, Stox, & Bagel sandwich that I ordered almost every single time I ate there. Being a long time foodie, nothing can really take me back to a time and a place better in my life like certain flavors of food. The combination of cream cheese with onion, capers, and smoked salmon is definitely one of those flavor combinations that always conjures up wonderful memories of chatting with my girlfriend over warm cups of rich coffee.
Since I now live over 3 hours from that corner cafe, popping over to order one of my favorite bagel sandwiches from them isn't exactly doable for me. But I was able to recreate the flavors (and memories!) of this tasty sandwich in mere minutes with a little help from Triscuit...
