This ooey, gooey Grilled Beer Cheese Fondue is a perfectly tasty way to start off your next cook-out or campfire dinner...
So it just occurred to me over the weekend that Father's Day is next Sunday. I swear, all of these holidays always seem to sneak up on me! Or maybe I am just trying to block out knowing that it is coming...
Have I ever mentioned that my dad happens to be the hardest person ever to shop for?? I am sure I am not the only daughter who has this same issue, but when my dad sees something that he wants he just buys it. So every single year, Father's Day, Christmas, and his birthday are always a gift-giving struggle for me. I had been buying him gift cards to his favorite stores and online shops to solve this on-going dilemma, but my mother confessed to me recently that my dad often forgets that he has them and they are all stacked together in a far corner of a shelf. So this coming Father's Day, I have a new plan- to make him a dinner fit for a dad! ;)
When I think of my dad and food, grilling automatically comes to mind. My dad rarely cooked when I was at home, but he always manned the grill. When I started planning my Father's Day feast, I knew that the grill would definitely have to be involved. Yep, the grill and cheese.And meat and beer. All the makings of a perfect Father's Day cook-out.
And then I started reading about the 2015 Wisconsin Cheese Recipe Contest for the Food & Wine Conference this year, and a light bulb went off. I knew exactly what I wanted to make not only for my contest submission, but also to start off my dad's special dinner next weekend... A beer cheese fondue that is made on the grill!
For weeks now, I have been seeing all these ideas floating around on Pinterest on how to make campfire cheese fondue using a simple bread bowl. I decided to finally give it a go for myself, and the results were deliciously amazing!
A soft and crusty bread bowl is stuffed with a beer & garlic infused cheddar cheese fondue and then heated until melted and gooey over a grill or campfire in this Grilled Beer Cheese Fondue...
Grilled Beer Cheese Fondue
Prep Time: 15 minutes
Cook Time: 25-30 minutes
Ingredients (Serves 6)
- 1 large round loaf of bread (like sourdough)
- 8oz of shredded mild Wisconsin cheddar
- 1 clove of garlic, roughly chopped
- 1/4 cup beer (I used a bourbon ale.)
- 8oz of cream cheese, softened
- 1/4 tsp Kosher salt
- 1/4 tsp black pepper
- Dippers perfect for fondue like peppers, broccoli & cauliflower florets, apple slices, etc.
If using a gas grill, heat one side of the grill on medium heat. If using a campfire or charcoal grill, let the charcoal or wood burn to white ash. For a charcoal grill, be sure to place the charcoal to one side of the grill.
Cut off the top of the large round loaf and set aside. Remove all the bread from the center of the loaf, leaving at least a 1/2 inch wall on all sides of the bread bowl. Set aside the bread bowl and the bread you removed from inside of it.
In a large food processor, combine the cheddar cheese and garlic. Pulse until the cheese is coarsely chopped and the garlic is mixed in well. Add in the beer, cream cheese, and salt & pepper. Pulse until well mixed. Pour & scoop the cheese mixture into the prepared bread bowl.
Loosely wrap the cheese filled bread bowl with 2-3 sheets of heavy duty aluminum foil. Place the wrapped bread bowl on the opposite side from the heat on your grill or campfire. Close the lid (or cover with a large pot if making this on a campfire), and grill for 25-30 minutes or until the cheese is heated all the way through and is ooey, gooey. (This took about 30 minutes on a gas grill for me.)
Unwrap the beer cheese fondue bread bowl and serve with the leftover bread from inside the loaf (cut into chunks), veggies, fruit, and even grilled steak, pork, or chicken cut into bite-sized pieces.
**Tip- If you find that after removing the bread bowl from the grill or campfire that it needs heated or melted a little more and have access to a microwave, zap on high for 30 second increments until heated and melted completely. Just be sure to remove the foil before doing this!

I can't imagine any dad being disappointed by being served this gooey and cheesy beer infused fondue! Especially when paired with some juicy & flavorful steak or chicken kabobs to dip in it. ;)
