Am I the only one who looks ahead to when their kiddos have left home and are in college and think about which things they will miss from home the most? (And I know that many of you have been or currently are in that place with your children.) I am still trying to wrap my mind around the fact that my son will be a high school graduate just 2 years from now. I mean, how do these things happen anyways?? One day I am taking him to Cub Scouts meetings and the next I am helping him register for classes for his freshman year of college. Those of you with little ones- it does happen that fast. Trust me.
And if I didn't happen to have a 3 year old at home as well, I just may break down crying every day thinking of how my oldest "baby" is more of a young man now than a curly haired little boy.
One of my son's all-time favorite dinners that I have been making for the past few years is this Slow Cooker Coq au Vin recipe I am sharing with you all today. He seriously gets giddy every time he sees it on our weekly menu board in the kitchen. :) He knows it by smell now too. If I happen to have the kitchen window open as it is slow cooking away, he will catch a whiff of it as he is walking up the hill from the school bus. He pops into the kitchen with eyes all a lit, and says "coq au vin?".
When I think ahead to when my son is all grown up and comes back home to visit, this is the recipe I imagine that he will always request that I make for him while he is home. Slow Cooker Coq au Vin
Prep Time: 15 minutes
Cook Time: 5-6 hours
Ingredients (4 servings)
- 1 tbsp olive oil
- 3 lbs chicken thighs, skinned
- 1 envelope (1/2 of a 2.2-ounce package) beefy onion soup mix
- 2 cups quartered fresh mushrooms
- 2 cups of whole baby carrots
- 1/2 cup dry red wine
- Hot cooked mashed potatoes (optional)
Preheat a large skillet over medium heat. Add the olive oil, & then cook the chicken thighs in the hot skillet until browned on both sides (about 3-4 minutes per side).
Place the chicken thighs into the bottom of your slow cooker. Sprinkle with the dry soup mix. Add in the mushrooms and carrots. Pour the red wine over top.
Cover and cook on low-heat setting for 5 to 6 hours or on high-heat setting for 2 1/2 to 3 hours.
Serve with mashed potatoes, if desired.

I originally stumbled across this recipe on the Better Homes & Gardens site about 2 1/2 years ago, and it has been a family favorite ever since. I actually didn't change too much about this recipe- only omitted the frozen small whole onions. My family isn't huge on chunks of onions in recipes, and we found that the packet of onion soup mix gave the dish enough flavor. You could certainly add in the whole onions if you happen to be an onion lover though. :)
I usually serve this Slow Cooker Coq au Vin with hot mashed potatoes and a crusty bread or soft rolls.
