With the start of another school year also comes the start of another cross country season for my son. And with after school practices every afternoon and meets just about every week, I am always trying to find quick, satisfying, and energy packed snacks for my son to fuel his practices and race days and to hold him over after practice until dinner time. Being a teenager, he would rather be eating potato chips washed down by a few chugs of a sugary soft drink. ;) Determined to come up with a few snack choice compromises that we could both love, I headed to my local Kroger to shop their Natural Foods Department...

I stocked up on favorites that I know my son would love and that I could feel good having on hand for him- Silk Dark Chocolate Almondmilk, Horizon Snack Grahams and Sandwich Crackers, Horizon Organic Microwaveable Classic Mac, and Horizon Organic Milk Boxes. Having all of these organic, real food choices in one area of the store was such a time saver for me! I could just zip up and down the aisles in the Natural Foods Department- no jumping from aisle to aisle and department to department all over the store just to find all of our natural food favorites. :)
Seeing the dark chocolate almond milk and the snack grahams, I instantly had an idea for a filling chia pudding inspired by a campfire classic- s'mores. The pudding itself is just 2 simple ingredients! Easy enough that even my son can whip this up for himself the night before a school day or a big meet... :)
S'mores Chia Pudding
Prep Time: 5 minutes + overnight
Cook Time: None
Ingredients (1 serving)
- 3 tbsp chia seeds
- 2/3 cup Dark Chocolate Silk Almondmilk
- 15 Horizon Honey Snack Grahams
- Approx 15 mini marshmallows
In a pint jar or glass, combine the chia seeds and dark chocolate almond milk. Stir well. Cover tightly and refrigerate overnight.
To make the s'mores chia pudding, layer 1/3 of the chia pudding in a glass jar or cup. Add in 5 Horizon Honey Snack Grahams and 5 mini marshmallows. Top with another 1/3 of the chia pudding. Add in 5 more grahams and 5 more mini marshmallows. Top with the remaining chia pudding and then the last of the grahams and mini marshmallows.
Serve with a spoon and enjoy!

Though I originally created this S'mores Chia Pudding as a way to get my son to eat an energy packed snack more often, it has quickly became a most requested afternoon snack from my 3 year old as well. Who can resist the grahams with the mini marshmallows layered with a creamy dark chocolate chia pudding? ;)
