Last week I shared with you all a recipe for a DIY Chai Spice Mix. And now I am giving you a holiday perfect recipe to use that spice mix in- these simple Chai Spiced Gingerbread Stars. :) I actually baked up these gingerbread cookies a couple of weeks ago to pack up & send off to the three fellow food bloggers I was matched up with for The Great Food Blogger Cookie Swap. This was my second year participating in the swap, but the swap itself is in its fifth year now. Basically it is a fun way to have a holiday cookie exchange with other food bloggers from around the country and to raise donations and awareness for Cookies for Kids' Cancer. You get 3 different dozen homemade cookies delivered right to your door, and you get to support a worthy cause at the same time- that is a win-win in my book. :)

I adapted this Chai Spiced Gingerbread Stars recipe from Allie's (Baking A Moment) recipe for Gingerbread Cookies That Don't Spread in the Oven. As soon as I came across her recipe, I knew I had to base my gingerbread recipe from her's. Most of you are probably all too familiar with gingerbread men who become puffy, inflated, & spread out of shape as they are baking. I made a few tiny tweaks to Allie's recipe, but these cookies held their shape as you can see from the photos.

Chai Spiced Gingerbread Stars

Prep Time: 10 minutes
Cook Time: 10-12 minutes
Ingredients (Approx 3 dozen cookies)
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1/3 cup dark brown sugar
  • 1/3 cup molasses
  • 1 egg
  • 3 cups self-rising flour
  • 1 tbsp cornstarch
  • 2 tbsp DIY Chai Spice Mix
  • Cinnamon imperials & sparkling sugar for decorating (optional)
Instructions
Preheat your oven to 375 degrees. Line a baking sheet with parchment paper or a silicone baking mat. Set aside.

In a large mixing bowl, cream together the butter and brown sugar on medium-low speed. Beat in the molasses. Scrape down the sides of the bowl, and then add in the egg. Beat again on low speed until just mixed.
In a medium mixing bowl, whisk together the self-rising flour, cornstarch, and chai spice mix.
Add the flour mixture to the wet ingredients, and mix on medium-low speed until incorporated. Divide the cookie dough in half.

On a well floured surface, roll out half of the dough to a thickness of about 1/4 inch. Cut the dough using a star shaped cookie cutter and then transfer to the prepared baking sheet. Decorate with cinnamon imperials and/or sparkling sugars. Bake at 375 degrees for 10-12 minutes or until set around the edges and firm to the touch. Transfer to wire racks and allow to cool completely.
Enjoy!

Cookies can be stored in an airtight container at room temperature for up to a week.

While I choose to cut my gingerbread cookies into stars, you could certainly cut these cookies into any shape that you would like. Just be sure to add a minute or two to the baking time for larger cut-outs.
I went classic and simple for the decorations for these cookies- sparkling sugars and cinnamon imperials. But these cookies would also be lovely decorated with a royal icing or your favorite buttercream frosting. :)

I have always loved gingerbread, but the addition of chai spices gives this classic cookie a whole new twist for the holidays.
