Now that summertime is pretty much in full swing, I am ready to break out all the no-bake recipes. I try to avoid turning on my stove top or oven as much as possible in the summer months. I mean, 80+ degree temps + a hot kitchen = no bueno, am I right? So from late June right on through the end of August, we are grilling, slow cooking, and no baking every chance we get. 

While I definitely have a pretty deep arsenal of slow cooker recipes & grilling favorites, I have realized that I really need to step up my no-bake desserts game on the blog. Inspired by the sweet summer strawberries that are just now starting to come into season around here & a two of my favorite Italian desserts, I came up with this easy to make Strawberry Cannoli Tiramisu. And the best part? It is 100% no-bake, folks! :)

Strawberry Cannoli Tiramisu

Prep Time: 15 minutes
Cook Time: 4 hours chilling time
Ingredients (Serves 9)
  • 1 package (3 oz) ladyfingers, split
  • 1/4 cup strongly brewed coffee + 1 tbsp sugar mixed in, then cooled
  • 2 tbsp sugar
  • 1 tsp vanilla extract
  • 4 oz mascarpone cheese
  • 1/2 container (7.5 oz) ricotta cheese
  • 1 1/2 cups whipped topping, thawed
  • 1/2 cup mini chocolate chips
  • 1 cup fresh strawberries, hulled & sliced
  • 2 tsp cocoa powder
Instructions
In a large mixing bowl, beat together the 2 tbsp sugar, vanilla extract, mascarpone cheese, and ricotta cheese until smooth & creamy. Fold in the whipped topping & chocolate chips. Set aside.

Arrange half of the ladyfingers in the bottom of a 9x9 inch baking pan. Brush the ladyfingers with about half of the coffee/sugar mixture.

Spread half of the ricotta/mascarpone cheese mixture over the ladyfingers in the dish. Top with half of the sliced strawberries. Cover with the remaining ladyfingers; then brush the second layer of ladyfingers with the remaining coffee mixture. Top with the remaining ricotta/mascarpone cheese mixture. Sift the cocoa powder over top, & then arrange the remaining strawberry slices on top. Sprinkle with additional mini chocolate chips, if desired.

Cover & refrigerate for at least 4 hours & up to overnight. Slice and serve. Enjoy immediately. You can cover & refrigerate any leftovers for up to 3 days.
