Have I ever mentioned to you all that fall happens to be my favorite season of the year? (I am pretty sure you guys have probably heard about my love of all things autumn at least a hundred times since I started this blog, but humor me, okay? ;) ) One of my favorite fall family traditions is our annual pilgrimage to a farm/apple orchard/pumpkin patch in Pennsylvania to go apple & pumpkin picking. We have been going to this very same farm each October for 6 years now. In fact, my daughter's first visit there is while she was still in utero. 

Flash forward 6 years later to the weekend before last when we once again visited our favorite farm to go apple picking. Except this time my sweet daughter happens to be smack dab in the middle of the Ferocious Fives. I am not even sure that the ferocious fives is technically a thing, but let me tell you all that my husband & I experienced the full brunt of it's wrath a couple of Sundays ago. And if it isn't already a thing, it totally should be. 

I won't get into all of the sordid details, but let's just say that we ended up leaving after only being there for an hour with my daughter screaming bloody murder the whole way back to the car. Did I mention that this farm is an hour & a half drive away? Yep.

By the time we got back home, we were all in need of some serious comfort food. But since I was pretty much emotionally & mentally spent by then, baking an apple pie or a crisp from scratch with our freshly picked apples was out of the question. Instead I whipped up these quick & easy Apple Chai Mug Cakes for Two. In less than 10 minutes, I had "baked" up two single serving cakes brimming with chunks of fresh apple & warm chai spices.

If you plan on whipping up these Apple Chai Mug Cakes soon, I would suggest that you go ahead & mix up the DIY Chai Spice Mix. I make myself a new jar of this stuff ever fall to have on hand for mixing into bowls of warm oatmeal, sprinkling on my coffee beans before I grind them, & for adding to pancake & waffle batter. Apple Chai Mug Cakes for Two

Prep Time: 5 minutes
Cook Time: 2 minutes
Ingredients (Serves 2)
  • 3 tbsp of unsalted butter
  • 1 egg
  • 2 tbsp apple cider
  • 1 tsp vanilla
  • 1/4 cup brown sugar
  • 6 tbsp of self-rising flour
  • pinch of salt
  • 1 tsp of my DIY Chai Spic Mix
  • 1/2 of a small apple, cored & diced
Instructions
Place the butter in a large mug & microwave it for 20-30 seconds, until melted. Add in the egg & whisk it in with a fork. Stir in the apple cider, vanilla, & brown sugar. Add the flour, salt, & chai spice mix. Beat the batter until smooth. Fold in the diced apples. Divide the batter between two mugs. Microwave separately for 1 1/2 to 2 minutes each until risen & firm.

Enjoy immediately!
