We all know the holidays will be here quicker than we are ready for them.  Am I right? ;)  I mean, I am still over here trying to wrap my head around the fact that November is done and over with and we are now officially 4 days into the last month of 2013.

Yes, folks.
In just 21 days, Christmas will be here.
Whoa...

I don't know about you all, but I think December weekend mornings should be celebrated with breakfast delights & treats.  But who necessarily wants to be stuck in the kitchen Christmas morning (or any morning this month) for an hour+ preparing a special breakfast for your loved ones?

I mean, not when you could be better spending that time snuggled up close to the tree with your little ones or your main squeeze catching A Christmas Story or A Charlie Brown Christmas with a warm mug of coffee in hand?  Or maybe browsing online trying to score those perfect holiday gifts?

My Cherry Cream Danish Muffins are the perfect solution then! They still have that holiday WOW factor, but just require 4 ingredients and are ready in less than 25 minutes...

prep time: 15 min cook time: 11 min total time: 26 min

ingredients:

  • 1 roll (8 count) of Grands! Flaky Layers Buttermilk Biscuits
  • 1/2 cup + 2 tbsp sugar
  • 4 oz. cream cheese, softened
  • 1/4 cup tart cherry preserves

instructions:

How to bake Cherry Cream Cheese Danish Muffins

  1. Preheat your oven to 350 degrees. Spray the inside of 8 muffins cups of a muffin tin with cooking spray. Set aside.
  2. In a small bowl, beat together the cream cheese & sugar until smooth & creamy, about 3 minutes.
  3. Sprinkle the remaining 2 tbsp of sugar onto a small plate. Unroll your refrigerated biscuits. Place one side of one of the biscuits into the sugar. Then press it into one of the prepared muffin cups, sugar side up. Press the biscuit down into the cup and then press up the sides to form a biscuit cup. Repeat this for the remaining 7 biscuits.
  4. Drop about 2 tsp of the cream cheese mixture into each of the 8 biscuit cups. Then top each one with a rounded tsp of the tart cherry preserves.
  5. Bake at 350 for 8-11 minutes, or until the edges of the muffins are slightly golden brown.
  6. Allow to cool in the pan for about 5 minutes and then remove. Serve warm.
  7. Enjoy!

My husband pretty much raved over these.  :)  The tart cherry preserve with the creamy, sweet cream cheese filling?
Yum.  Seriously, folks.

Of course, you could use any flavor preserves in these if you are not a fan of cherry.  I like the cherry because it just looks holiday festive, but you could easily substitute blueberry, raspberry, peach... you name it.

If you are feeding a larger crowd, you could easily double or triple this recipe and maybe use a different preserve in each batch and offer a variety to your brunch or breakfast guests.
