Who else is excited that turkey day is almost here?? I have to say I really look forward to Thanksgiving each and every year- especially since I started hosting our family's Thanksgiving dinner almost 4 years ago. 







Now, it isn't a huge production. 







Usually I am only hosting about 8 total for the big dinner, but this year our Thanksgiving dinner table is going to be even more intimate. It will just be my husband and I and the two kiddos since my parents and my sister and her husband are heading to my sister's in-laws for the day. 







At first, I was a little bummed. I mean, I really love hosting this big dinner each November. But then the thought of a smaller dinner with just the husband and the kids grew on me. 







Less pressure (who cares if the house isn't 100% spotless?), more flexible (dinner doesn't have to be ready right at 1:00), and it even leaves a little more time to enjoy a little tradition I started last Thanksgiving with my daughter- making an easy yet special breakfast together for everyone to enjoy while watching the Thanksgiving parade on television.







Last year, my daughter and I made these Turkey Shaped Cinnamon Rolls. Except I cheated a little and used our favorite refrigerated Pillsbury Sweet Rolls® instead of the cinnamon roll dough from scratch. 







With a turkey in the oven and four side dishes waiting to made, there was no way I was making homemade cinnamon rolls that morning too! ;)

This year we are going to make these super easy and fun Apple Pie Cream Cheese Waffle Pockets for Thanksgiving breakfast






I love this breakfast recipe because 1. you only need 5 ingredients to make these, 2. they are made in the waffle maker (our oven will be otherwise occupied with a roasting turkey), and 3. they can be on your breakfast table in less than 30 minutes.

I was able to quickly pick up everything that I needed to make these family-pleasing Apple Pie Cream Cheese Waffle Pockets at my local Walmart. I was already there picking up a few last minute things for Thanksgiving dinner, so it was convenient as well.

These quick and easy to make Apple Pie Cream Cheese Waffle Pockets are stuffed with cream cheese & your favorite apple pie filling.

prep time: 10 min cook time: 15 min total time: 25 min

ingredients:

  • 8 count (16 oz) Pillsbury Grands!® Biscuits
  • 2-3 oz of cream cheese, softened
  • Canned apple pie filling
  • 3-4 tbsp sugar
  • 1/2 tsp ground cinnamon

instructions:

How to cook Apple Pie Cream Cheese Waffle Pockets

  1. Heat up your waffle maker or iron. While it is heating up, take the biscuits out of the tube and cut each biscuit in half through the middle so you essentially have 2 thinner biscuits per biscuit.
  2. On a plate or tray, set out one half of each of the biscuits. Add 1 tbsp of the cream cheese and 1 tbsp of the apple filling to the center of the halved biscuit. Place the other half of the biscuit on top and pinch around the edges. Repeat for the remaining 7 halved biscuits.
  3. Place the filled biscuit into the center of the waffle maker & press down gently. Leave it in the waffle maker for 1 to 1 1/2 minutes until the outside of the biscuit is golden brown & crispy.
  4. Repeat this with the remaining 7 filled & sealed biscuits.
  5. While the first waffle pocket is cooking, whisk together the sugar and cinnamon in a shallow dish. As each waffle pocket comes out of the waffle iron, give it a quick turn in the cinnamon-sugar mix.
  6. Serve while still warm. Enjoy!
  7. **Be careful not not overfill the biscuits. There will be some oozing of the filling anyways, but if you overfill you may lose all of your filling to the waffle iron grid!
