Back to school is just around the corner, & I am sure that most of you all are in full-on prep for the new school year. I know that we are. 





We have been picking up school supplies at the store, doing a little clothes shopping, & making sure all the paperwork is in order for my daughter to start second grade. We have been checking off our back to school to-do list & then checking it twice. 





But did you know that one of the single most important things that we, as parents, can do to make sure our kiddos are ready for school each morning is to ensure that they are eating a healthy, filling breakfast? And one of the best (& easiest!) ways to do that is to make sure to include dairy in their daily breakfast.





In fact, dairy foods happen to be one of the most budget friendly ways to add more protein to your kiddo's breakfast. And more protein means your child will stay feeling fuller longer, which in turn improves their concentration during class. 





Just one serving of milk, yogurt, or cheese includes 8 grams of high quality protein & 9 essential nutrients.





One of my daughter's favorite breakfast foods happens to waffles. This girl would eat waffles every single morning if she could. 





So, I decided to take her most requested breakfast dish & give it a dairy & protein boost by using Greek yogurt instead of oil in the waffle batter. The results? Perfectly fluffy waffles bursting with fresh blueberry flavor! (And also a very happy & full second grader... )

I decided to use Greek yogurt in this waffle recipe versus just regular yogurt because Greek yogurt happens to be a dairy powerhouse, packing between 14 to 17 grams of protein per serving! 





It is also a healthier way to replace the oil that packaged waffle mix usually calls for. And for an extra burst of blueberry flavor, I used blueberry Greek yogurt in addition to the fresh blueberries in these waffles.

Here are a few tips to make these waffles even more back-to-school friendly:



  • I like to double or even triple this recipe & then make a big batch of these waffles on the weekend. Once they have cooled, I slip them into freezer safe bags & pop them in the freezer. To heat, just pop a frozen waffle in the microwave for 60-90 seconds.
  • Serve a cold glass of milk with these waffles for even more staying power and to get your kiddos focused & ready for a new school day.
  • If your kids happen to not be big fans of blueberries, then no worries. Swap in strawberry Greek yogurt & chopped strawberries instead. Or try raspberry Greek yogurt with fresh or frozen raspberries.

Double Blueberry Greek Yogurt Waffles

ingredients:

  • 2 cups of your favorite waffle mix
  • 1 cup water
  • 1 (5.3 oz) cup of nonfat blueberry Greek yogurt
  • 1 egg
  • 1 cup fresh or frozen blueberries

instructions:

How to cook Double Blueberry Greek Yogurt Waffles

  1. Heat your waffle iron. In a large mixing bowl, whisk together the waffle mix, water, Greek yogurt, & egg until smooth. Fold in the blueberries.
  2. Once your waffle iron is heated, spray with cooking spray. For larger, Belgian style waffles, using 2/3 -1 cup of batter per waffle. Cook according to your waffle iron's settings.
  3. Remove & serve warm with butter & syrup. Enjoy! 

NOTES:

The amount of servings this recipe makes will vary depending on how large of waffles your waffle iron makes. The above is based on my waffle iron that makes 12-inch, Belgian style waffles.
