Well, folks... it's that time of the year again! The kiddos are heading back to school soon or maybe have already started back like my youngest has this past week. And while there are definitely crazy busy school mornings where I end up sending my daughter out the door to catch the bus with a breakfast bar in hand, most mornings I try to whip up something that will keep her full & fueled until lunch time.
One of my favorite ways to do this is by incorporating calcium rich yogurt into her back to school breakfasts. Yogurt, especially Greek yogurt, is packed with protein that stays with my daughter right through until the lunch bell rings.
This recipe for Strawberry Explosion French Toast Roll-Ups I am sharing with you all today packs a double yogurt punch with the addition of Dannon® Oikos® Triple Zero Vanilla Greek Yogurt & a Danimals Smoothie.
We stopped at our local Target to pick up everything we needed to make these kid friendly breakfast roll-ups. My daughter loves anything strawberry so we had to take home a 6-pack of the Danimals Smoothie in Strawberry Explosion.
We also snagged a 4-pack of the Dannon® Oikos® Triple Zero Vanilla Greek Yogurt for the 15 grams of protein packed into each cup. If you would like to make these french toast roll-ups ahead of time to make those busy school mornings just a little easier, complete all the steps of this recipe up until the baking part. Just wrap them directly in the baking pan with plastic wrap and simply heat in the oven the next morning! :)
You can even freeze these roll-ups for up to one month in your freezer. Just allow them to unthaw a little before baking them.
Strawberry Explosion French Toast Roll-Ups

Prep Time: 15 minutes
Cook Time: 12-15 minutes
Ingredients (Serves 4)
- 8 slices of Market Pantry White Sandwich Bread
- 1 egg
- 1 Danimals Smoothie in Strawberry Explosion
- 1 ( 5.3 oz) cup Dannon® Oikos® Triple Zero Vanilla Greek Yogurt
- Diced strawberries
- Simply Balanced Organic Vanilla Bean Granola
- Sliced strawberries & more granola for topping
Instructions
Preheat your oven to 400 degrees. Spray the inside of a 9x9 baking pan with cooking spray. Set aside.
Cut the crust off each slice of the bread, & then roll out each slice with a rolling pin.
Use 1/3 cup of the Dannon® Oikos® Triple Zero Vanilla Greek Yogurt and spread about 2 teaspoons of it 1 inch from one end of each slice of bread in a strip. Sprinkle the some of the diced strawberries & a little of the granola over top of the yogurt. Roll the bread up tightly and repeat with the remaining pieces of bread.
In a shallow bowl, whisk the egg & 1/4 cup of the Danimals Smoothie until well combined. Dip each bread roll in the egg mixture coating well, & then place them in the baking pan seam side down.
Bake at 400 degrees for 12-15 minutes or until cooked through. While the roll-ups are baking, whisk together the remaining Greek yogurt & Danimals smoothie to use as a glaze for the roll-ups.
Allow the roll-ups to cool to warm. Then top with the yogurt glaze, sliced strawberries, & a granola. Serve immediately.
