Hello Everyone! I'm Lorraine from Cookin' For the Seven Dwarfs. I'm a library specialist by day and by night and on my days off you'll find me in the kitchen cooking up some new creations for the Dwarfs (Aka: my dad and 6 brothers!).

 I'm so excited to be guest posting here on Frugal Foodie Mama today! I know Carrie loves Cookie Butter probably just as much as I do, so in celebration of her birthday week, I made these yummy Cookie Butter Cookie Ice Cream Sandwiches!

A Little Recap of Cookie Butter Week...

I don't know about you all, but I had a blast with Cookie Butter Week last week! :) I was happy to share my mild obsession with cookie butter with my other fellow addicts, and to introduce my readers who are cookie butter virgins to all the fabulous goodies you can make with it.  Hopefully, this past week has inspired a few of you who haven't jumped on the cookie butter bandwagon yet to go out and pick up your very first jar.

There were so many wonderful posts from last week that I decided to do a little recap post for you all, and it make it easy for you to click on over and see all the cookie butter yumminess from the past seven days.

Cookie Butter Coconut Haystack Cookies

Cookie Butter Week is definitely in full swing on the blog! :) There is just so much cookie butter goodness I could scream. 
I was so inspired after putting together my recipe round-up posts for the week, that I came up with a handful of my own delicious recipes using cookie butter.  I really love the Peanut Butter Cornflake Cookies from Six Sisters' Stuff and decided to try my own spin on their cookies using cookie butter instead and adding in some coconut (and also making a smaller batch because their recipe makes a TON of cookies- Great for summer family get-togethers, friends!)

Cookie Butter Coconut Haystacks

Prep Time: 10 minutes
Cook Time: 5 minutes

Ingredients (12 generous sized cookies)
  • 2/3 cup corn syrup
  • 1 cup white chocolate chips
  • 2/3 cup cookie butter
  • dash of salt
  • 1/2 tsp coconut extract
  • 4 cups of cornflakes
  • 1 cup toasted coconut
Instructions
In a large bowl, mix together the cornflakes and toasted coconut. (To toast the coconut, spread the coconut on a lined baking sheet and bake at 325 degrees for about 5-10 minutes. Stir halfway through the baking time & check it often because it can burn easily.) Set aside.

In a medium saucepan, heat together the corn syrup, white chocolate chips, and cookie butter. Once melted down and heated together, allow it to simmer and bubble slightly for 2-3 minutes. Remove from the heat and stir in the salt and coconut extract.

Immediately pour the heated mixture over the cornflake/coconut mixture in the large bowl and mix to coat thoroughly and evenly.

It should be cool enough to handle after a few minutes.
Lay out a sheet of waxed paper and using your hands, form the cookie mixture into generous "stacks" and allow them to cool completely.

Store in an airtight container for up to 5 days.

I hope you all have been enjoying Cookie Butter Week so far this week! :) This is my first time doing an all themed week on the blog (other than the week I shared everything from my baby girl's Rainbow Birthday Bash), and I have to say that I really love it.  (Yes, please expect more themed weeks on the blog in the very near future. ;) )  This is the second and last cookie butter recipe round-up post of the week.  But Cookie Butter Week is FAR from over.  There are still 3 more all new Frugal Foodie Mama recipes yet to come!  So, please check back here tomorrow and over the weekend.

I asked my blogger friends and I scoured Google to find the best breakfast recipes using cookie butter.  Yes, my friends...  I have just made eating cookie butter for breakfast okay.  

Please feel free to go ahead and applaud me now.  Raise a statue.  Declare an official Frugal Foodie Mama Day in the blogosphere. ;)
