Hi, I'm Deb from Cooking on the Front Burner and happy to be guest posting today for Carrie as she celebrates her birthday week!!  (oh yea, birthdays should be celebrated all week in my opinion!)

I started blogging about 2 1/2 years ago as a way to keep and share recipes with family and friends.  I think I can be called a recipe-o-holic.  I love reading cookbooks as novels, subscribing to food magazines and searching other blogs for new recipes to try.  If you are a dinner guest at my place, most likely I am making something new for you to experience.  And when I'm not in the kitchen, I am probably (re)decorating my house, reading a good book or most recently spoiling our new granddaughter!

Carrie and I have been friends for awhile now and when she mentioned she loves Italian food - and since I'm Italian, I had the perfect recipe for her.  This is one my favorite ways to use fresh summer tomatoes and herbs.  We have a small garden where we only grow tomatoes, peppers and a few herbs for either Italian dishes or making salsa.

Pasta Raccolta Estivo {A Guest Recipe from Love in the Kitchen}

I know that Carrie is a fan of Italian food, and, as it is her birthday, I am sharing a wonderful pasta dish that I've created - a special one-skillet Italian dinner, made with ingredients fresh from the garden called Pasta Raccolta Estivo (aka, pasta from the summer harvest).  This is a perfect summer celebration dinner - filled with summer flavors and simple to make so you can spend time celebrating instead of slaving over a hot stove.  And with just one skillet to wash, you've got more time to eat cake!

Mini Tiramisu Chocolate Cakes {A Guest Recipe from Busy Mom's Helper}

Happy Wednesday Ya'all! I'm so excited to be here at Frugal Foodie Mama today, and especially glad to help celebrate Carrie's upcoming birthday - woohoo!!! It's really neat to make friends in the blogging world, and Carrie is such a wonderful friend with one of my absolutely favorite blogs, so it truly is a delight to share this week with her!

So, in case you didn't know, one of Carrie's favorite desserts is Tiramisu (delish!). In honor of her upcoming fun-day, I've shared not only ONE but TWO Tiramisu recipes on my blog today! Now, these aren't your normal pieces of Tiramisu.....and I'm only going to tell you about one of them here (ya, I'm a tease).....Mini Tiramisu Chocolate Cakes.

Peppermint Mocha Cocktail Cake {Guest Recipe from Cooking with Curls}

Good morning all! I may be just a *tad* excited about Birthday Week on the blog. ;) Just a little...
First up is my good pal Lisa from Cooking with Curls.  This lady is known for her bundt cakes (which you all know I pretty much adore), but she is also known for making cocktails INTO bundt cakes! (Better yet, right?? ;) )
When she heard that Peppermint Mochas are my fave Starbucks beverage, it was a no-brainer for her to turn it into a cocktail bundt cake in honor of my birthday.  Thank you, Lisa! It looks amazing!

One Ingredient Healthy Ice Cream {A Guest Recipe from So There. By Amy}

In the summer, I definitely am craving ice cream! This is an awesome healthy and dairy free alternative to totally satisfy your ice cream craving!

The recipe has one ingredient:  Bananas! B-A-N-A-N-A-S!

...Plus a couple optional mix-ins added: unsweetened cocoa powder, nut butter, and sweetener, if desired, such as agave or maple syrup.



Yep. No dairy.  Not even a dairy alternative, like coconut milk. (Which is another of my ice cream posts, found here!)
A magical thing happens when you throw frozen sliced bananas in a food processor for about a whole minute or so. Yup. They turn into a soft serve ice cream-like consistency!


First, start pulsing them, and you will get small chunks.

Keep going, and they will turn into tiny little balls, like Dippin Dots!



Continue mixing in the food processor and it comes together, becoming nice and creamy. I promise. It does!






Yes, this will have a banana flavor, duh, but it is so refreshing, and the addition of cocoa powder and peanut butter makes it taste like an amazing chocolate covered banana, in ice cream form!


Add the other ingredients (this will help the bananas blend more and get even smoother - sometimes my food processor gets a little jammed up at a certain point with the bananas only), and pulse until incorporated.


...(Did the word incorporated just remind anybody else of KIDS Incorporated?!)  

Anywayyy, it should look like this!

Eat straight away, or scoop into a container and freeze until scoopable.

Boom! A super healthy frozen treat that totally resembles soft serve ice cream!

You could mix it up, and throw in any other flavors you like, too, instead of the cocoa powder and nut butter! Fresh fruit, like strawberries. Or a bit of honey and chai spice. Anything! Go crazy!...Go... Bananas! B-A-N-A-N-A-S!  Oh man...even I cringed at that bad joke!

Buttered Basil Dinner Rolls {A Guest Recipe From Juggling Act Mama & a Giveaway!}

I'm thrilled to be sharing a much-loved recipe with all of Carrie's readers.  Frugal Foodie Mama is one of my favorite blogs, and often inspires me with her great recipes, so it is truly an honor.  Another of my favorite bloggers is The Pioneer Woman - I mean, what's not to love, right?  Mr. Juggling Act got me her cookbook for my birthday and I've spent many a happy minute drooling over browsing through it.  Her Buttered Rosemary Rolls caught my eye and I knew I had to make them. They have quickly become a family favorite.

I love the smell of fresh bread rising and baking in my house - I do not, however, enjoy the process of kneading and fussing with bread.  That's why this recipe is genius - it starts with store-bought frozen dough. 
No joke.  I even use the store brand.  Seriously.

I decided that I would use Ree's basic method with the cast iron pan and butter, but that I would swap the rosemary for basil (yum!) and add some garlic.  As I was rummaging through my pantry, I came across the Basil Salt I'd made earlier in the Fall and decided to use a bit to really add some flavor.
I'm going to give you the recipe using just straight up basil and kosher salt, but if you make some of the basil salt, you won't be sorry.
Trust me.  Ah-ma-zing.  Amazing.
Anyhow, back to the rolls - they are so soft and chewy on the inside, and so flavorful on the buttery outside with the basil, garlic and salt.  You can't go wrong with this recipe!


Buttered Basil Dinner Rolls
Inspired by The Pioneer Woman
Ingredients:
Frozen, unbaked dinner rolls
Butter
Dried basil, or chopped fresh basil
Kosher salt
Granulated garlic
Instructions:
In a small cast iron pan, melt about 2 tablespoons of butter.  Remove the pan from the heat and let it cool for about ten minutes.  Place the unbaked rolls in the pan and brush with more melted butter.
Cover and let them rise until they're about doubled in size.  Gently brush on a bit more butter.
What? I didn't say they were healthy dinner rolls.
Sprinkle the rolls generously with the salt, garlic and basil and bake according to the directions on the package until they are golden brown. 
Serve hot.  With butter.
