It is that time of the year again... time for chilly evenings, cups of warm cocoa, those first snow flurries.... and those cold & flu germs.




Yep. Those yucky germs with the coughing, stuffiness, sneezing, and sniffles they bring start invading the pleasantness of the season.




We pick them up at work or school and bring them home.  Friends & family who stop over & visit leave them at our doorstep.  Play dates always come with the risk of it.  You name it.






My go-to remedy for my family when the cold & flu germs come knocking at our door is lots of snuggles, hot tea with honey, boxes of tissues, and a pot of my Homemade Chicken Lemon Soup...

My Homemade Chicken Lemon Soup comes together fairly easily and quickly, & that is especially important when the official chef of the family (aka, mom) may not be feeling so well herself.  ;)

I like to throw 2-3 chicken breasts in my slow cooker with just a tiny bit of water and allow them to slow roast on low for about 4-5 hours.  Then when it is ready, I just cut them into bite size chunks for this soup.  




Much easier & cheaper than picking up a rotisserie chicken at the grocery store- I have never been a fan of having to cut up a whole chicken when I am feeling under the weather either. 




I also love the addition of the fresh lemon juice in this soup.  It is well known that a little vitamin C can go a long way to helping to fight off and prevent cold germs.

Homemade Chicken-Lemon Soup

Prep Time: 15 minutes
Cook Time: 30 minutes
Ingredients (6 servings)
  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 3 cloves of garlic, minced
  • 32 oz carton of chicken broth (or 4 cups of homemade chicken broth- try my Easy Homemade Chicken Broth recipe!)
  • 2 cups water
  • 3/4 cup uncooked rice (I like to use Basmati rice in this.)
  • Juice of 1 lemon
  • 2 tsp cornstarch
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 egg, lightly beaten
  • 2 cups of chopped or shredded cooked chicken
  • chopped fresh parsley and lemon wedges- for garnishing (optional)
Instructions
Heat the olive oil in a dutch oven over medium-high heat. Add the onions & garlic and saute for about 2 minutes.

Pour in the chicken broth and water. Bring to a boil and then stir in your uncooked rice.
Reduce the heat and allow it to simmer for about 15 minutes.

While the rice is simmering, whisk together the lemon juice, egg, cornstarch, salt, & pepper in a small bowl.
Slowly the whisk the egg mixture into the broth & rice.

Add in the chicken and continue to simmer it until the rice is done, the soup has thickened slightly, and the chicken is heated through.

Ladle into bowls and garnish with lemon wedges and fresh chopped parsley, if you like.
