Homemade Biscoff Flavored Coffee Creamer

I consider flavored creamers a little bit of an indulgence in my morning coffee a few times a week.  I also always have a small bottle of some flavored coffee creamer or other in my fridge, but most mornings I am a fat free half & half and a small spoonful of sugar kind of gal.

It occurred to me one morning a couple of weeks back that no one has created and started selling a cookie butter flavored coffee creamer yet!
I mean, why has this not happened yet??
The gingerbready, cinnamony-spiciness of Biscoff would pair perfectly with a freshly brewed cup of coffee!

Perplexed by the lack of cookie butter flavored creamers in the dairy section, I decided to take matters into my own hands and set out to make my own. ;)
And it ended up being delicious, creamy, cookie butter flavored perfection.

Because most flavored creamers do not err on the side of light and low fat, I decided to make this Homemade Biscoff Flavored Coffee Creamer with lite coconut milk, fat free condensed milk, and almond milk.  It took me two tries to perfect this recipe, but the second attempt was a sure winner for my morning coffee.  :)
Homemade Biscoff Flavored Coffee Creamer

Prep Time: 10 minutes
Cook Time: 5 minutes
Ingredients (About 20-22 oz)
  • 1 cup lite coconut milk
  • 1/2 cup Biscoff or cookie butter
  • 1/2 tsp cinnamon
  • 1/2 cup fat free sweetened condensed milk
  • 1 cup almond milk
Heat the Biscoff and a 1/2 cup of the coconut milk in small sauce pan over medium-low heat. Stir constantly until the cookie butter is completely dissolved. Do not boil.

Remove from the heat and whisk in the sweetened condensed milk and cinnamon. Set aside and let cool for at least 5 minutes.

Once cooled, pour into a medium mixing bowl. Add in the the remaining 1/2 cup of coconut milk and the 1 cup of almond milk. Using an immersion blender or hand mixer, blend the mixture on low speed for 3-5 minutes until well blended.

Funnel into a pint sized mason jar and the remaining creamer into an 8 oz jar.
Store in the fridge to chill completely.

This creamer should stay good in your refrigeration for about 1 1/2 weeks.

This Homemade Biscoff Flavored Coffee Creamer might be one of the best things that has ever happened to my morning coffee.  It isn't overly sweet like most store bought creamers are, so you may find you need to add a spoonful of sugar or sweetener to your cup of coffee if it isn't quite sweet enough for you.
