Roasted Spinach & Garlic Hummus

I sort of have a thing for homemade hummus now.   
Once I discovered how incredibly easy it is to make at home and how crazy budget friendly it is, I was hooked. 
I mean, seriously folks.  I can pick up a can of garbanzo beans for less than 70 cents at my local ALDI.  
And it is crazy versatile.  It lends itself to all kinds of flavor profiles- from the mild to the flavor packed.
This Roasted Spinach & Garlic Hummus definitely errs more on the side of flavor packed. And you get all this rich, delicious flavor from just a few minutes of roasting in your oven! From start to finish, you can be dipping your baby carrots and pita chips in this tasty & fresh dip in around 20 minutes...

Roasted Spinach & Garlic Hummus

Prep Time: 15 minutes
Cook Time: 2-3 minutes
Ingredients
  • 2 cups of fresh spinach leaves
  • 2 cloves of garlic, smashed and roughly chopped
  • 1 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 15oz can of garbanzo beans (chickpeas), drained with liquid reserved
  • 1 tsp Kosher salt
Instructions
Preheat your oven to 425 degrees.

In a large bowl, toss the spinach, garlic, olive oil, & balsamic vinegar until well coated.
Spread the spinach mixture on to a baking sheet. Roast in your oven for 2-3 minutes.
Take the baking sheet out of the oven and allow it to cool for at least 5 minutes.

Add the drained beans and about 1/4 cup of the reserved liquid to your food processor. Pulse until smooth.
Add in the cooled spinach/garlic mixture and the Kosher salt. Pulse again until it is well incorporated and smooth. Add more reserved liquid from the can of beans if needed.

Serve with celery sticks, pita crackers or triangles, baby carrots, pepper slices, etc.
Store any leftovers in a covered container in the fridge for up to 5 days.
