You all know by now that most evenings of the week I cook for my family.
But let's keep it real- there are definitely nights when I don't feel like cooking.
Or nights when the day has been so trying and busy that I am tempted to pick up a pizza or take-out.  Not the healthiest or most budget friendly choice though.
I mean, what I really want to do on most evenings like those is take off for the local Mexican restaurant for dinner and margaritas, but that just isn't always in the budget for us.
That is why I am so glad that I recently discovered HERDEZ® Cocina Mexicana Frozen Bowls in the freezer section at my local grocery store.

I will admit it- I am always skeptical of frozen meals. Often times, they are just okay or downright blech. But other times, you hit a tasty frozen food jackpot.
And these Herdez Frozen Bowls are one of those rare jackpots, folks. ;)
I was really impressed with the Beef Barbacoa Bowl- tasty, perfectly seasoned tender chunks of beef served alongside Spanish style rice.

To make family dinner-in with HERDEZ® Cocina Mexicana Frozen Bowls a little more fun, I came up with a kid friendly Mockagarita recipe to share with you all...

Mockagarita

by Frugal Foodie Mama
Prep Time: 5 minutes
Cook Time: None
Ingredients (1 drink)
  • Crushed ice to fill one margarita glass (I used plastic ones for the kiddos.)
  • Juice of 1/2 a lime
  • Lemon-lime sparkling seltzer water
  • Simple syrup (optional)
  • Sugar for rimming the glass (optional)
  • Lime wedges (for garnishing- optional)
Instructions
To give your glass a sugar rim, heavily sprinkle sugar onto the outer edge of a small plate. Wet the rims of your glasses with a lime wedge, and then twist the glass upside down into the sugared plate until well coated.

Fill a margarita glass with crushed ice. Squeeze the fresh lime juice over the ice.
Pour in the seltzer water to fill the cup. Using a straw, give the mockagarita a quick stir.

If you find it needs to be sweetened a little, you could add a little simple syrup to the drink and stir. Although, I found that the sugar rim alone added enough sweetness to the drink.
Garnish with a lime wedge, if desired.

Serve and enjoy with your HERDEZ® Cocina Mexicana Frozen Bowls!
