Whether you are a blogger or just follow blogs online (like this one), you may have heard us use the term blogging community here and there. Most of the time a blogging community is created and fostered so that we can help each other grow our blogs, bounce ideas off of each other, ask for blogging advice, and to share each other's work.  In the world of blogging, you can't "make it" without some other bloggers supporting you. And that is a fact, folks. ;)

And then there are times when blogging community comes to mean so much more to us. Like when one of our own is dealt a blow or setback in their personal lives. As bloggers, we come together to rally behind those in our community who have fallen on more difficult times even when we haven't met that blogger in person...

A little over a year ago, Ashley from CenterCutCook found out that their husband of 10 years has colon cancer just one week after learning that she was pregnant with their first child.  A joyous moment that they had been celebrating was soon clouded over with that very scary diagnosis. 

Their son Miles was born healthy and happy, and the family had reason to be hopeful and joyous. But not even two months after his birth, Ashley and her husband were dealt yet another gut-wrenching blow- Miles was going into kidney failure. Miles is currently in need of both a kidney and a liver transplant and receives hemodialysis 4 times per week, while his father is enduring bi-weekly chemotherapy treatments. I can't even fathom how strong Ashley has been and continues to have to be on a daily basis. 

While many of us bloggers in her "community" do not live close enough to be there to physically help her out, we are banding together online today to rally behind her, spread the word about their family, and to ask you all to help with their growing medical bills- even if you cannot donate much, every little bit helps and would be greatly appreciated by Ashley, Ryan, and Miles.

If Ashley lived closer to me, I would want to help whenever and wherever I could. Even if it was to just bring her a simple casserole so she wouldn't have to worry about making or picking up dinner that day. 

My go-to would be this hearty and comforting Pizza Pierogi Casserole I am sharing with you all today. This casserole is perfect for a busy weeknight or take to a friend or family member in need. You can even personalize it by adding their favorite pizza toppings.

This Pizza Pierogi Casserole also freezes beautifully. Simply wrap tightly with foil and then freeze. :)

Pizza Pierogi Casserole

Prep Time: 10 minutes
Cook Time: 25-30 minutes total
Ingredients (8 servings)
  • 2 (16oz) packages of your favorite frozen pierogies
  • 16 oz jar of your favorite pizza sauce
  • 2-3 oz of sliced pepperoni
  • 1- 1 1/2 cups of shredded mozzarella cheese
  • Any additional pizza toppings that you would like
Boil the two packages of frozen pierogies according to the package directions. Drain in a colander and allow to cool slightly.

Preheat your oven to 375 degrees. Spray a 13x9 inch baking dish with cooking spray.

Start layering your pizza pierogi casserole in this order- 1/3 of the pizza sauce spread into the bottom of the dish, then half the boiled pierogies, then another 1/3 of the pizza sauce spread over the pierogies, then half the pepperoni slices and any other toppings you wish to add, then half the mozzarella cheese. Repeat the layering again from the pierogies.

Bake in the oven at 375 for 15-20 minutes or until the cheese is melted and bubbly.
Allow to sit for 10 minutes before serving.

To Freeze the Casserole
Cover the baking dish tightly with aluminum foil. Allow the casserole to thaw completely in the fridge before baking. Then follow the directions above to bake.
Casserole should keep well in the freezer for up to 2 months.
