Creamy Summer Fruit Pizzas

"Summer, summer, summertime... Time to sit back and unwind." Okay, I know, I know. It isn't quite officially summertime yet. We are still 19 days away from that. But it certainly feels like summertime around here already. Temperatures have been in the balmy 80's most of this week, and my oldest's summer break from school started this past weekend. So for all intents and purposes, let's just say that summer has indeed arrived, k? ;)

Aside from the warmer weather and evenings around the fire pit, I most look forward to summertime for the flavors of the season. Sweet, juicy fruits and berries come into season. My basil plant overflows with bright green, fragrant leaves. And my mind starts spinning with delicious recipe ideas inspired by the sweet, fresh flavors of summer. 

These Creamy Summer Fruit Pizzas are the very embodiment of my love for perfectly ripe summer peaches and juicy blackberries. When they are paired with creamy ricotta & rich mascarpone cheeses and a little fresh basil, the end result is delicious, no fuss pizzas perfect for summertime...

Creamy Summer Fruit Pizzas

Prep Time: 20 minutes
Cook Time: 10-12 minutes
Ingredients (2 personal sized pizzas)
  • Your favorite homemade or store bought pizza dough (enough for a 12 inch pizza)
  • 2/3 cup low fat ricotta cheese
  • 1/4 mascarpone cheese
  • 1/2 tsp Kosher salt
  • 1/4 tsp fresh cracked black pepper
  • 1-2 fresh peaches, pitted and sliced
  • 16-18 fresh blackberries
  • 1/3 cup balsamic vinegar
  • 6-8 fresh basil leaves, thinly sliced
Instructions
Preheat your oven to 425 degrees. Line a large baking sheet with parchment paper. Set aside.

Divide your pizza dough equally into two balls. On a floured surface, roll each dough ball out into a 6 inch circle. Transfer to the prepared baking sheet.

In a small mixing bowl, combine the ricotta cheese, mascarpone cheese, Kosher salt, and black pepper. Mix until creamy and blended well. Evenly divide the cheese mixture between the 2 pizza crusts. Top each pizza with the peach slices and blackberries. Bake for 10-12 minutes or until the crust is lightly golden brown.

While the pizzas are baking, prepare the balsamic reduction. Pour the balsamic vinegar into a small saucepan. Bring to a boil and then continue simmering over medium-low heat until it has reduced down to about half. This should take 3-5 minutes. Set aside and allow to cool.

Once the pizzas are done baking, allow them to cool slightly. Then drizzle with the balsamic reduction and top with the fresh sliced basil.
Serve immediately.

There happens to be another reason (other than my mild obsession with summer flavors) that I am sharing this creamy, cheesy pizza recipe with you all today- June 1st happens to be the first day of National Dairy Month! :) 

You all may remember when I hopped in the car last September and took a little road trip to Cleveland to hang out with the good folks from the America Dairy Association Mideast. We spent an entire day exploring the dairy farms outside the city where we met the Indoes and Andreas families. Did you know that in Ohio and West Virginia alone that more than 2,700 family owned dairy farms raise more than 275,000 dairy cows?  On average, Ohio and West Virginia dairy cows will produce around 645 million gallons of milk each year!
