Can you all believe that the month of October starts this weekend?? It would be a bit of an understatement to say that I am just a tad excited.
I have always been more of a fall kind of gal since I was a kid. There is just something about the smell of fall leaves, the crisp air, our annual pilgrimage to the apple orchard and pumpkin patch, and of course one of my favorite holidays of the year- Halloween! :)
I just love everything about Halloween- the pumpkin carving, taking our youngest trick or treating, dressing up for my parents' annual costume party, and all the holiday inspired spooky recipes. In fact, I make it a goal of mine every fall to come up with a couple of new treats to bring to my parents' house for our family Halloween party.

Haunted Pumpkin Patch Popcorn Crunch

Ingredients (Serves 6-8)
- 9 cups of popped popcorn (about two 2.9 oz bags of microwave popcorn)
- 1/2 tsp salt (omit if you are using salted microwave popcorn)
- 1/2 cup corn syrup
- 1/2 cup Dixie Crystals Granulated Pure Cane Sugar
- 1/2 cup creamy peanut butter
- 1/2 tsp vanilla
- 2 cups of Mellowcreme Pumpkins (like Brach's)
- 1/2 cup ghost shaped candies or sprinkles (I used ones from Wilton)
Instructions
Toss your popped popcorn with the salt in a large bowl.
In a small saucepan, mix together the corn syrup and sugar. Bring to a boil and let simmer for 2 minutes. Remove from the heat and mix in the peanut butter and the vanilla. Once the peanut butter is incorporated, immediately pour the mixture over the popcorn in the bowl and stir well to coat the popcorn.
Add in the candy pumpkins and ghost shaped sprinkles and fold in.
Turn the mixture out onto 2 large baking sheets lined with waxed paper. Allow to cool and set completely, about 15-20 minutes.
Store in an airtight container for up to 4 days.
