When it comes to New Year's Eve, my family and I like to keep it low key, fuss free, yet still fun and festive each year. We usually stay home to ring in the new year with a little bubbly (sparkling wine for my husband & I and sparkling grape cider for the kiddos), lots of tasty appetizers, and a classy dessert. 








We may not be painting the town at some swanky party when the clock strikes midnight, but we still like to do something special at home as a family to celebrate the beginning of a new year.

We topped our shortcakes with fresh raspberries, mini chocolate chips, pomegranate seeds, sliced strawberries, and my Candied Pomegranate-Mandarin Orange Peel, but feel free to use your family's favorite toppings for your NYE dessert bar. 








You can fill the shortcake shells with the cannoli cheesecake filling ahead of time, cover, and refrigerate until you are ready to serve them. Then simply set out your dessert toppings, and let everyone go to town! :)

ingredients:

  • 1 cup Coburn Farms Whole Milk Ricotta Cheese
  • 4 oz. (half the container) of Coburn Farms Whipped Plain Cream Cheese
  • 1 tsp vanilla
  • 1/3 cup powdered sugar
  • 2 packages of Essential Everyday Shortcake Dessert Shells (8 total)
  • Sliced strawberries, mini chocolate chips, raspberries, pomegranate seeds, etc for topping the shortcakes

instructions:

How to cook No-Bake Cannoli Cheesecake Shortcake

  1. In a medium mixing bowl, beat together the ricotta cheese, whipped cream cheese, vanilla, & powdered sugar until well blended. Cover & refrigerate for at least 2 hours & up to overnight.
  2. Once chilled, use a pastry bag fitted with a frosting tip with a large opening to pipe the cannoli cheesecake filling into each dessert shell. Allow your party guests to garnish their own shortcakes with sliced fruits, berries, chocolate chips, candied orange peel, pomegranate seeds, etc.
  3. Enjoy immediately!
