I don't know about you all, but we are finally enjoying some warmer weather & sunshine here in my neck of the woods. And warmer weather means that summer is just around the corner. And the arrival of summertime means hosting lots of BBQ's & outdoor get-togethers for our family & friends!

Inviting friends & family over for a little cookout in the backyard is probably one of my favorite things about summertime. My husband usually grills some hot dogs or smokes a couple of racks of ribs while I have a second tasty main dish simmering away in my slow cooker. We'll throw down a few friendly games of corn hole, and then we'll light the fire  pit for s'mores making once the stars come out.

Whenever I am planning my next family summer get-together, my local Sam's Club is always my first stop. I can buy everything that I need for feeding a hungry crowd there all while saving both time & money... :)

On my most recent trip to Sam's Club, I spied these tasty Hillshire Farm Cheddarwurst Smoked Sausage Links & had to toss them in the cart. Sure, I could have just grilled them & slapped them into bratwurst buns, but then I spotted the Ball Park Tailgaters Crustini Buns and recipe inspiration struck. How about some sliced sausage sandwiches instead?

I sliced and browned the Cheddarwurst and then added them to my slow cooker with some sliced jalapenos, onions, & our favorite beer. Can I just tell you all that this dish made my kitchen smell amazing after just a couple of hours of slow cooking?

I whipped up this super quick & easy Avocado Jalapeno Mayonnaise for these sandwiches using the Hellmann’s Real Mayonnaise that I also picked up at my local Sam's Club. You literally only need 3 ingredients & few minutes to make this tasty flavored mayo! You can make it a day ahead of time & simply store it covered in the fridge until you are ready to use it.

I put together a little self-serve station complete with the Crustini buns, the avocado jalapeno mayonnaise, & the slow cooked sausage slices for assembling sandwiches so that my guests could just help themselves.

by Frugal Foodie Mama
Prep Time: 20 minutes
Cook Time: 4-8 hours
Ingredients (Serves 10-12)
  • Hillshire Farm Cheddarwurst Smoked Sausage Links 15 Count, sliced diagonally into rounds
  • 3 tbsp unsalted butter
  • 3-4 large jalapenos, seeded and sliced
  • 1 large onion, thinly sliced
  • 2-3 (12 oz) beers (enough to cover the sausage, onions, & peppers)
  • 4 tbsp unsalted butter
For the avocado jalapeno mayonnaise
  • 1 tbsp olive oil
  • 1 small jalapeno, seeded & minced
  • 1/2 of an avocado, mashed
  • 2/3 cup Hellmann’s Real Mayonnaise
  • Ball Park Tailgaters Crustini Buns 12 count
Instructions
In a large skillet, heat the 3 tbsp of butter over medium-high heat. Once melted, add in the sliced sausages and brown on both sides. Add the sausage slices to your slow cooker once browned.

Add the sliced jalapenos & onion to the sausage slices in the slow cooker. Pour the beer over top. Add in the 4 tbsp of butter. Cook on high for 4 hours or on low for 6-8 hours, stirring occasionally.

To prepare the jalapeno avocado mayonnaise
Saute the diced jalapenos in 1 tbsp of olive oil for 2-3 minutes. Set aside & allow to cool.
Add the mashed avocado, mayonnaise, & jalapeno to a small food processor. Process until smooth & creamy. Cover & refrigerate until ready to serve.

To assemble the sandwiches
Place 1-2 scoops of the sausage, jalapeno, & onion mixture onto your bottom bun using a slotted spoon or tongs. Spread 2 tbsp of the jalapeno avocado mayo on your top bun & then place on top of the sausages. Enjoy!

A few tips for hosting your next backyard blast with these Slow Cooker Jalapeno & Beer Cheddarwurst Sandwiches...
  • I loved the jalapenos in this recipe because they paired perfectly with the smokiness of the sausage links. But if you would prefer to dial down the spiciness a little, use more mild peppers in this like bell peppers or poblano peppers.
  • Feel free to add other toppings to your sandwich station like fresh jalapeno slices, plain Hellmann’s Real Mayonnaise, & sliced cheddar cheese.
  • If you have a few extra minutes, toast the buns. I simply heat a little olive oil in a large skillet over medium heat & toast the two bun halves for 1-2 minutes.
