The crazy weather we have been having here lately has been wreaking havoc on my immune system. We went from arctic-like, below zero temperatures one week to Florida-like weather the next week. And the weather is still see-sawing here between rainy spring & snowy winter this week. 







I ended up with a sinus infection over the weekend that quickly morphed into a full-on case of laryngitis. Let me just say that I am glad that I have a job where I work from home & do not have to talk on the phone very often. ;)







Feeling under the weather has me craving some of my favorite comfort foods like the recipe for this Chicken Marsala Noodle Soup I am sharing with you all today. This soup is a classy, flavorful take on my classic homemade chicken noodle soup recipe. It incorporates all the classic flavors of Chicken Marsala- sauteed mushrooms, crispy prosciutto, & rich Marsala wine- into a comforting, cozy soup your entire family will love...

My daughter has long been a fan of my Easy Homemade Chicken Noodle Soup, aka what she has been calling Cockadoodle Soup since she was around 4 years old. ;) And up until now, that soup has been her most requested dinner. 






But I think this Chicken Marsala Noodle Soup is quickly becoming her new favorite. Let's just say that she had THREE helpings of this soup the evening that I made it.

A few suggestions for making this soup:




  • I used baby bella mushrooms in this, but you could also use porcini. Both varieties will lend a deep flavor to this soup. 
  • I have made this soup without the prosciutto, & it was indeed delicious. But I wouldn't skip this ingredient if I was you. The mushrooms become even more flavorful when cooked in the fat from the prosciutto, & you just cannot beat the crispy prosciutto as a tasty topping for this soup.
  • I used store bought chicken broth in this recipe, but you can totally sub in homemade chicken broth in this instead. A homemade broth will add even more richness & depth to this soup. Try my recipe for Easy Homemade Chicken Broth
  • Since this question often gets asked when I am sharing a recipe that calls for alcohol- no, there is no substitute for the Marsala wine in this. It is what makes this soup a Chicken Marsala Noodle Soup and not just a chicken & mushroom soup. ;) Just about all of the alcohol in the cooking wine does cook out though.

Chicken Marsala Noodle Soup

prep time: 10 mins cook time: 30 mins total time: 40 mins

ingredients:

  • 1 lb (about 2 large) chicken breasts, cooked & chopped
  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • 2 oz. of prosciutto, chopped
  • 1 medium shallot, finely chopped
  • 2 cloves of garlic, minced
  • 1 (8 oz) package of baby bella mushrooms, washed & sliced
  • 2/3 cup Marsala wine or cooking wine
  • 32 oz. carton (4 cups) of chicken broth
  • 2 cups of water
  • 1 tsp dried oregano
  • 8 oz of wide egg noodles
  • Salt & pepper, to taste
  • Chopped fresh parsley for garnishing (optional)

instructions

  1. In a large pot or dutch oven, heat the olive oil & butter over medium-high heat. Once heated, add in the chopped prosciutto. Cook until browned & crispy, about 2-3 minutes. Using a slotted spoon, transfer the prosciutto to a paper towel lined plate. Set aside.
  2. Add in the shallot & garlic. Saute for 2 minutes, then add in the sliced mushrooms. Cook another 2-3 minutes, stirring frequently. Pour in the Marsala wine & cook another 2 minutes. 
  3. Pour in the chicken broth & water. Add in the oregano. Turn the heat up to high to bring to a boil. Once boiling, add in the noodles. Turn down the heat to medium & continue on a low boil until the noodles are almost done. Add in the chopped chicken. Cook another 5-7 minutes. Season with salt & pepper, to taste.
  4. When ready to serve, ladle into bowls & top with the crispy prosciutto & fresh parsley (if desired). Enjoy!
