So, we are on like what? Day #1,525,123 of the stay at home/quarantine life now? And yes, like everyone else I am starting to feel a little restless and antsy & long for some of the normalcy from my life pre-virus...




For one, I miss my gym workouts something fierce, you all. Specifically, cardio machines like my beloved elliptical and stair climber. 




Yeah, I know I could go out and run, but A. I kind of hate running and B. Mother Nature hasn't really been cooperating weather-wise. I mean, one day it is sunny and in the 60's and the very next day it is flipping snow here. Or it is raining. Or just plain cold.




I also miss getting my hair cut. And since I went much shorter with my hair in the fall, I had been stopping in to see my stylist about once every 3 weeks before all of this went down. I made the decision a few weeks ago to just go with it and started growing it out. 




My hair is presently in that super awkward stage of having ducky feathers and sticking out in weird places, so I am super thankful for my stretchy, wide headbands right now. And baseball caps. 




And the fact that I can't go out socially (because no one wants to witness this, lol). But hey- what better time to decide to grow it out than now?

I also miss happy hours with my best friend. And as the weather gets warmer, I am longing to sit out on a patio, sipping on cocktails. 




And road trips... usually springtime is when I start going on my first press trips of the year, & I am missing those little getaways right now.




Don't get me wrong, you all. I am not complaining. To be honest, the fact that so many states are starting to re-open now is kind of freaking me out a little. So I plan on staying cautious and hunkering down for a few more weeks and seeing how everything pans out. 




And I can think of no better way to hunker down at home than with these easy to make Peanut Butter Oreo Cake Mix Cookies I am sharing with you all today. ;)

Cake mix cookies are kind of my weakness. I love how soft and chewy cake mix cookies always turn out, and they are just so easy to make. There are literally just five ingredients in this cookie recipe.




Plus, how can you possibly go wrong when you are adding actual cookies to a cookie recipe?? ;) These irresistible peanut butter cookies are loaded with chopped mini Oreos.

A few tips & suggestions for making these cookies:



  • I used mini Oreos in this recipe, but chopping up regular Oreos and adding them to the cookie dough will work just the same. 
  • If you don't have white cake mix on hand, feel free to use yellow cake mix instead.
  • Are you a chocolate lover? Then use chocolate cake mix instead in this recipe and add in 1/2 cup of chocolate chips. 
  • I used crunchy peanut butter in this because I like the extra crunch the peanuts add to these cookies, but you can totally use creamy peanut butter instead.
  • Food blogger tip: Reserve a few of the chopped Oreo pieces to press into the tops of the cookies before baking. This will give your cookies that picture perfect presentation.

Peanut Butter Oreo Cake Mix Cookies

These easy to make peanut butter cookies are loaded with chunks of chopped Oreo cookies.

Prep time: 5 min Cook time: 14 min Total time: 19 min

Ingredients:

  • 1 box of white cake mix
  • 1 cup of peanut butter (creamy or crunchy)
  • 1/2 cup canola oil
  • 2 eggs
  • 1 cup of chopped Oreos

Instructions:

  1. Preheat your oven to 350 degrees. Line a baking sheet with parchment paper. Set aside.
  2. In a large mixing bowl, combine the cake mix, peanut butter, canola oil, and eggs. Mix until well incorporated. Fold in the chopped Oreos.
  3. Roll the cookie dough into 1 1/2 tablespoon balls and place on the cookie sheet at least 2 inches apart. Slightly flatten each cookie dough ball with the palm of your hand.
  4. Bake for 12-14 minutes or until the edges are slightly golden brown. Allow to cool for a few minutes the baking sheet, then transfer them to a wire rack to cool completely. 
  5. Store in an airtight container for up to 5 days. Enjoy!
