Chocolate Funfetti Sheet Cake

Chockfull of rainbow sprinkles, this dense and fudgy Chocolate Funfetti Sheet Cake is topped with the most airy & light chocolate whipped frosting. A little slice of happiness on a plate!









I have been contemplating the meaning of happiness lately- the complexities of it, the things that enhance our own personal happiness and the things that seem to hinder or take away from it, and the various ways that we sometimes seem to get in the way of our own happiness.




I mean, when do we know that we are truly happy? 

When we stop reaching for the next big thing? The better thing? When we allow ourselves to finally feel some contentment with how things are in the here and now?

But then you have to ask yourself- is that really true happiness? Or is that just settling?




Shouldn't we always be striving to better ourselves? To improve our lives? To love harder? To love ourselves more? To push that extra mile or two? To not give up on the things that we feel are important in our lives just because it may be hard at the moment?








I really didn't mean for a recipe post for Chocolate Funfetti Sheet Cake to delve into some deep philosophical essay into what it truly means to find happiness. But sometimes as a blogger when you sit down at your keyboard and start to type, the words just start to flow. 

And so here we are. 

Chatting about happiness, chocolate cake, and all the rainbow sprinkles.

 














While I certainly don't know the secret to the meaning of life and or have the pathway to happiness figured out just yet, I can tell you one thing- it is definitely difficult to feel unhappy when you have a slice of this moist, fudgy Chocolate Funfetti Sheet Cake sitting in front of you.






This particular cake has been requested on repeat from my 11 year old daughter over the past 5 months. I first made it for her basketball team's end-of-season potluck dinner. 






Then it had to be made twice during my daughter's birthday month- once for our family party for her and again for when she had a party with her friends.






To say that this cake recipe is well-tested and perfected would be an understatement.

















This sheet cake starts with my base recipe from my How to Make a Boxed Cake Mix Taste Better Than Bakery post, but I added in lots of rainbow sprinkles to the cake batter before baking.







This cake is then topped with the most airy & light chocolate whipped frosting- the perfect complement to the dense & fudgy cake. And for good measure, I topped the frosted cake with even more rainbow sprinkles.






Because there is no such thing as too many rainbow sprinkles- am I right? ;)

















Here are a few tips & tricks for making this cake:




  • If you would rather make this into a layer cake, then spray two 9-inch round cake pans with cooking spray and then lightly dust with cocoa powder. Pour the cake batter evenly into the two pans and bake at 350 degrees for 30-35 minutes.
  • Not a fan of chocolate? (I know, I know... but there are some people who just don't like chocolate that much.) Then switch it up with white cake mix & vanilla instant pudding. Just be sure to omit the cocoa powder from the frosting recipe and swap in one teaspoon of vanilla extract instead.
  • Make this sheet cake into a chocolate lover's dream by making one quick swap- skip the rainbow sprinkles and add in chocolate chips instead. Top the frosted cake with chocolate jimmies, mini chocolate chips, or chocolate shavings (or all 3- why not? ;) ).
