In case you all haven't noticed it already, I have been on a little bit of a chai spice kick the past week. ;) 







I updated a long-time reader favorite, my Overnight Pumpkin Pie Chai French Toast, with pretty new pics. And I posted a delicious and creamy Chai Tea & Pear Oatmeal recipe to the blog last Friday. I mean, when it comes to chai spices, 'tis the season! 







The toasty flavors in warm chai spices not only make me think of cozy fall recipes, but this mix of comforting spices is something I can incorporate into my holiday baking and cooking right on through to Christmas. 







That is why I decided to whip up my own DIY Chai Spice Mix last fall. I always have a jar of it in my pantry ready to go for my holiday baking, or to mix into my oatmeal or a warm cup of hot cocoa.

Confession time: I just may get a little obsessed with chai spicing everything once the cooler temps have hit here and the leaves begin to change colors. There is just something about that warm blend of cinnamon, cardamom, ginger, nutmeg, cloves, & black pepper that says, "Yes, folks. Fall has arrived." 





In fact, I love chai spices so much that I even came up with my own DIY Chai Spice Mix so I can conveniently & quickly add my favorite fall spice combo to everything





One of my favorite flavor combinations for the fall season happens to be pumpkin with chai spices. They just pair perfectly together! :) I have made Pumpkin Chai Hot Buttered Rum and Overnight Pumpkin Pie Chai French Toast on the blog already, but I haven't did a pumpkin/chai combo in a cookie before.

A traditional Italian dessert gets a tasty cinnamon spiced twist perfect for fall in this No-Bake Cinnamon Tiramisu.



I am a self-proclaimed tiramisu addict, and I have no shame in admitting that, folks. ;) There is just something about that creamy mixture of mascarpone cheese, rich coffee, & delicate ladyfingers that I just can't resist. While I can always go for a slice of good ole traditional tiramisu, I often find myself playing around with the flavors in my homemade versions. Since fall has finally arrived, I thought why not try my hand at a warm & cozy cinnamon spiced version?

I left out the cocoa powder entirely in this no-bake version and replaced with it layers of sweet cinnamon flavor. The coffee that the ladyfingers are soaked with has been steeped with a whole cinnamon stick. Then ground cinnamon is whipped into the creamy filling. And for good measure, each slice is served with a little sprinkle of cinnamon over top. The perfect dessert for the cinnamon & tiramisu lover alike!

So can we talk about how it is has been in the 70's and 80's here the past few days, and it also happens to be NOVEMBER? Usually by this time of the year, I am donning flannel and jeans with boots on the regular. 






But not the past couple of days- I am sporting short sleeves and broke back out the flip-flops (I decided to ignore the fact that I am in desperate need of a manicure. Carpe diem, right? ;) ) I figured these warm, summer-like days were the perfect time to finally share this new homemade ice cream recipe that I have had in the works for well over a year now. 






Yes, folks. I have been holding out on you all with this one for 365+ days now. Please forgive me, but I have my reasons. My first round of photographs for this recipe didn't do it justice. I mean, it is crazy how much you can improve your food photography skills in just one short year. 






And so I broke down and made this recipe again some time the beginning of last month, photographed it, went to edit said photos, and realized that I hated those too (let's just say there was a lot of orange going on in that round of photos). So, I figured third time had to be the charm! :) 






Finally. A round of photos that I couldn't wait to share with you all. And let's just talk about this ice cream for a sec, k? Bite-sized chunks of pumpkin chocolate chip cookie dough and mini chocolate chips folded into a creamy homemade vanilla ice cream- pretty much fall ice cream perfection here, folks...

Although I am a huge fan of both pumpkin and coffee, one thing that I am not a big fan of is the ever popular pumpkin spice lattes that start popping up on the menus of coffee shops all over the country this time of year.  Maybe I am in the minority & maybe I am just weird, but I have tried them more than once & I don't get the hoopla. 






But before you all start forming a mob to burn me at the stake, one thing that I do love and can't enough enough of are any and all desserts inspired by the popular fall must-have coffee drink.  This moist & decadent Pumpkin Spice Latte Layer Cake is a prime example of my pumpkin/coffee dessert obsession this time of the year. ;)






This cake is amazing, you all. Fan of the PSL or not, this may become your new favorite sweet treat for fall...

Need proof?  Remember when I dedicated an entire week on the blog just to cookie butter? ;) Yeah... there was that.






And I am not going to lie.  I have been pining away for fall because I KNOW that Biscoff (also known as cookie butter under some labels) is the perfect complimentary flavor to just about all of the popular fall flavors.






Pumpkin?  Heck yeah! (And yes, there will be recipes coming to the blog soon marrying our favorite orange gourd with our favorite non-peanut butter spread.)
