Easy Homemade Chicken Noodle Soup

This comforting family favorite recipe for Easy Homemade Chicken Noodle Soup can be on the table in around 30 minutes...

Easy Homemade Chicken Noodle Soup- this comforting family favorite recipe can be on the table in around 30 minutes!

Okay, you all. I am sharing a recipe with you guys today that will just crush that canned stuff you have been heating up over the years.

It takes just a little more effort than cranking that can open and dumping the contents into a pan, but not so much more that you can't make this Easy Homemade Chicken Noodle Soup happen on a weekday evening. This delicious homemade soup can be on your dinner table in around 30 minutes, folks!

I have been making this recipe for my family for years now, and it is definitely a monthly meal plan favorite. In fact, it just may be my daughter's most favorite dinner at the moment. Not a week goes by that she doesn't ask me at least twice if we are having "Cock-a-doodle" soup for dinner.

I had thought about actually titling my recipe by this adorable name my three year old has given it, but I didn't want to you all to think that any roosters had been harmed in the making of this soup. ;)

There is nothing fancy in this recipe- chicken broth, carrots, celery, chicken- but it is definitely the simplicity of it that just speaks of wholesomeness, comfort, and family dinners around the table...

Chicken Alfredo Lasagna Soup

Now that the school year is back in session, you will want to add this creamy, budget friendly Chicken Alfredo Lasagna Soup to your weeknight meal planning arsenal...

Well, the kiddos are all officially back at school for the New Year.
Time for a new semester & in some cases (like our's) new teachers and new classes.
(Aka, potential new headaches, worries, and banging my head against the wall as I struggle to help my son who is a freshman in high school with subjects I struggled with as a teenager and apparently still cannot grasp... *sigh*.)

Can he just take all history and English classes for the rest of his high school career??
I was a certified social studies teacher who taught junior high and high school for over 8 years.  And I almost studied to become an English teacher instead of a history teacher...

But math and physics and chemistry?
Blech.
Try as I may, I cannot re-learn these subjects to help him along.
Anyone know a good tutor I can hire? ;)

We all have enough on our plates with the school year and sports seasons and dance classes and after school clubs and practices back in full swing.
How about a tasty, creamy bowl of Chicken Alfredo Lasagna Soup that you can whip up on a weeknight in just about 30 minutes?

Tavern Style Shepherd's Pie

This Tavern Style Shepherd's Pie combines two traditional weekend classics into one delicious, family-pleasing meal...

This Tavern Style Shepherd's Pie combines two traditional weekend classics into one delicious, family pleasing meal.

I think you all pretty much know by now that if I can utilize my slow cooker during the day to help make evening dinner prep easier and quicker, I am all for it.  When I was approached to give one of Campbell's new Slow Cooker Sauces a go, I was more than game.

I picked up a package of the Campbell's Slow Cooker Sauce in Tavern Style Pot Roast and started brainstorming how I could transform the well-loved, slow-cooked pot roast into an amazing and tasty weeknight meal.

Quick Weeknight Lasagna Soup {Food Bloggers Against Hunger}

I know that there are a TON of lasagna soup recipes floating around on the internet.  I am by no means claiming this is the best or most original recipe for it out there.

What I can claim is that this was my very first time making it, it was super budget friendly, it was ridiculously quick and easy, and everyone who tried it LOVED it.
I am also sharing this post as part of the Food Bloggers Against Hunger Movement happening today.

"Food insecurity—the limited or uncertain availability of nutritionally adequate and safe food— exists in 17.2 million households in America, 3.9 million of them with children."
"Food-insecure households are 15 times as likely as food-secure households to get food from a
food pantry, and 19 times as likely to have eaten a meal at an emergency kitchen."
"76.5 percent of food-insecure households did not use a food pantry at all during the year; 27%
said there wasn’t a pantry in their community and 15% said they didn’t know whether one was available."

What you will need:
1 tbsp canola oil
1 lb of ground beef
Salt & pepper
One 24 oz jar of your favorite pasta sauce
1 1/2 cups of beef broth
2 cups of water
1/2 tsp crushed red pepper (more or less depending on your heat preference)
8 lasagna noodles, broken into spoon sized pieces
Shredded mozzarella, for topping the bowls of soup

In a dutch oven, heat the canola oil over medium-high heat.  Add the ground beef.  Season with salt & pepper, and cook until browned.

Add in the beef broth, pasta sauce, and water.  Mix in the crushed red pepper (you can omit this if you prefer no spiciness to the soup).  Bring to a boil and then add in the broken lasagna noodles.

Continue to boil for about 5 minutes and then turn down the heat to medium.  Cook until the lasagna noodles are tender.

Ladle the soup into bowls and then top with a smattering of shredded mozzarella cheese.

I just want to say that this soup can be super versatile and you could throw in any leftover veggies you may have on hand towards the tail end of browning the ground beef.  This would be great with some diced zucchini or bell peppers added in.  You could also top the soup with Parmesan cheese or a dollop of ricotta cheese if you wish.  It is all about using what you already have on hand. :)
