Announcing the Spiked! American Craft Beer Recipe Challenge Winner!!


First let me start off with a big ole my bad and an apology... The announcement of the Spiked! American Craft Beer Recipe Challenge winner was supposed to happen on Monday.  I blame sand and saltwater still lingering on the brain for my lapse in memory.  ;)  
Our family beach vacation was wonderful, but my brain didn't adjust well to the return to reality.  

This month's Spiked! ingredient was American Craft Beer.  Recipe submissions could be anything using an American Craft Beer except for a cocktail or drink.

Spiked! American Craft Beer Recipe Challenge

It is no big secret that myself and my good foodie blogger friend, Julie from This Gal Cooks  love to cook and bake with alcohol.   Don't believe me?  Then make sure to check out my recipes for Slow Cooker Tequila Lime Beef Barbacoa  and Beer Cheese Risotto with Bacon.  Or Julie's Deep Dish Beer Crust Pizza and Tequila Lime Shrimp Tacos.  

Julie & I have teamed up to bring you all a recipe challenge with a twist (of lime or lemon, if you please ;) )- your recipe must feature the alcoholic beverage being spotlighted that month! Every two months there will be a new Spiked! Recipe Challenge with a new featured boozy beverage.  July's featured ingredient is....  American Craft Beers!  Julie and I are not shy about the fact that we are both beer snobs.  Plus, going with American craft beers is a nod to our country's Independence Day celebration in just a few days.;)

So what exactly is an American Craft Beer?  According to the Brewers Association, the definition of a true American craft beer is that the production is small (less than 6 million barrels of beer produced annually), it is independent (aka, not majority owned by a major brewing company), and is made from traditional brewing methods. So by definition that rules out your Budweisers, Miller Lites, & Coors (sorry, folks!).  

Not sure if the beer you are considering using in your recipe is a craft beer?  Go local. :) Small, local breweries are almost always considered craft beer producers.

So, let's get to the rules...

You must have the Spiked! button in your recipe post to be considered as an entrant.  It would also be SUPER awesome if you included the button on your sidebar, but it is not a requirement to win. ;)

The recipe you submit MUST BE YOUR OWN.  You can be inspired by another's recipe (and please include a link back somewhere in your post to that original recipe), but you must make that recipe your own in some way.

The recipe must feature the beverage of choice.  This month's Spiked! ingredient is American craft beer.  Your beer in your recipe MUST be an American craft beer for your submission to be considered for judging. Your recipe can be anything BUT a drink recipe.  You must cook or bake with the Spiked! ingredient.  

You must link up your American Craft Beer recipe when the linky goes live on July 15, 2013 to be considered for judging.  The linky will remain open for just two days.  No entries will be accepted past that date.

All recipes will be judged by myself and Julie from This Gal Cooks.  
The winner will be announced one week after the entry linky has closed and will be emailed as well as announced on each of our blogs.

This beer bread is just so simple & turns out absolutely soft and delicious every single time that I bake it.  Plus, beer bread is one of those very rare homemade breads that does not require any rising time.  
Not even one minute.
You can thank the yeast and the carbonation in the beer for that, folks. ;)

When I moved back to my home state of West Virginia after living in the Columbus, Ohio area for 8 years, Columbus was just then starting to experience a growing craft beer movement. While local breweries were very few in number (think maybe Barley's, Columbus Brewing Company, & Elevator Brewing downtown), craft beer tap takeovers in local bars had started to become more & more popular. In fact, these tap takeovers is how I first experienced and fell in love with craft beers.

Fast forward 8 years later, and the craft beer scene in Columbus has totally evolved into a full-fledged local brewery movement. In fact, there are now over 40 breweries & counting in the Columbus area alone! I knew I had to get back to C-bus to explore the local brewery scene. I spent two days in the city- even embarking on a guided brewery tour- and I didn't even get to a fourth of the breweries in the city!

Even though I didn't get to experience everything Columbus's local brewery scene has to offer on this most recent visit, I did get a good taste of what the city has been brewing up since I moved away. Today I am sharing a few of my favorite craft beer gems from Ohio's state capital...

Butternut Squash Cheddar Ale Soup

The craft beer selection in my hometown makes me sad.  I live in a small rural area where Budweiser and Miller Lite reign over dueling kingdoms.  The demand for good, small batch brewed beers doesn't exist where I live now.

And I am spoiled.
I lived in a big Midwestern city for nearly 9 years.  There was craft beer EVERYWHERE.
Local breweries were popping up around the corner and across town.
You didn't have to find a specialty store to buy good beer- they sold it in the beer caves of the local grocery stores.
Then I lived near Pittsburgh for about a year.  Again, it wasn't difficult to find good beer.

I love good craft beers.  I love drinking them.  I love cooking and baking with them.
Julie from This Gal Cooks & I decided on fall beers for this month's Spiked! Recipe Challenge ingredient.  
I was excited and also a little bummed...
I wasn't sure what I would find at the local beer stop that would fit into the fall beers category.  
I walked in and was literally trying to decide between what seemed to be my only two options- one pumpkin beer and an Oktoberfest.  
And then I spotted the Blue Moon Brewmaster's Seasonal Sampler! 
Thank goodness- it afforded me not one, but FOUR fall seasonal brews- jackpot!

I knew I wanted to make a beer cheese soup, but I couldn't just make beer cheese soup. That would be too easy. ;)
I took it one step further and truly gave it a seasonal kick with a little roasted butternut squash.  I decided to go with the Blue Moon Short Straw, a red ale flavored with coriander and white pepper.  I knew those flavors would pair perfectly with the squash and cheddar.

Butternut Squash Cheddar Ale Soup

Prep Time: 10 minutes
Cook Time: 30 minutes roasting time, plus
Ingredients (6 servings)
  • 1 small butternut squash
  • olive oil, salt, & pepper
  • 1/2 cup chicken broth
  • 1/2 medium onion, diced
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 2 cups chicken broth
  • 12 oz bottle of fall/harvest ale
  • 1 bay leaf
  • 1 tbsp whole grain Dijon mustard
  • 2 cups shredded cheddar (I used mild.)
  • 1 cup half & half
  • 2 tsp cornstarch
  • Bacon for garnishing (optional)
Instructions
Preheat your oven to 400 degrees. Cut the top off of your squash and then cut it in half lengthwise. Clean out the seeds and pulp from each half.
Place the squash halves flesh side up on a baking sheet. Brush each half with olive oil and then season with salt & pepper.
Roast in the oven for about 30 minutes, or until fork tender.
Set aside and let cool.

In a dutch oven, heat the olive oil and butter over medium heat. Once the butter is melted, add in the diced onions and saute until tender, about 3 minutes.

Pour in the chicken broth and beer. Let simmer for 5 minutes.

While this is simmering, scoop out about 2 cups of the roasted butternut squash and place it in a blender or food processor. Add in the 1/2 cup of chicken broth and puree.
Pour the butternut squash puree into the chicken broth/beer mixture in the dutch oven and mix well.

Add in the bay leaf and Dijon mustard. Cook another 10 minutes.

Stir in the shredded cheddar until completely melted.

In a small bowl, whisk together the half & half and the cornstarch. Quickly whisk this into the soup.
Cook another 3-5 minutes until the soup has thickened slightly.

Ladle into bowls and top with crispy bacon if you would like.
Enjoy!

Chipotle Bourbon Ale Burgers {Spiked!}

For this month's Spiked! American Craft Beer Recipe Challenge, I decided to combine one of my husband's favorite American craft beers with one of our favorite foods to eat while drinking said beer- Burgers! 
My husband is a HUGE fan of Kentucky Bourbon Barrel Ale.  The only problem with that?  
They do not sell it here in West Virginia.  When we visit my old stomping grounds in Columbus about once a year, we make a stop to The Andersons just to pick up a couple of 4-packs of this coveted beer.  
Yes, I said 4-packs.  This gem of a beer is above being seen in a 6-pack.  ;)

If you are also among those of us who do not have access to Kentucky Bourbon Barrel Ale in your home state, you could use another full bodied, deep caramel ale as a substitute.  I would not recommend using lighter bodied/colored ales in this recipe.  They will fail to give these burgers the depth of flavor that they deserve. 

Chipotle Bourbon Ale Burgers

Prep Time: 12 minutes
Cook Time: 15-20 minutes

Ingredients (4 burgers)
  • 1 lb of ground beef (I used 80% lean)
  • 1/4 cup panko bread crumbs
  • 1 tbsp chipotle pepper in sauce (be sure to finely chop the pepper & remove any seeds to reduce the heat level if you wish)
  • 1/4 tsp Chinese Five Spice
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1 tsp salt
  • 1/2 cup beer
  • 2-3 dashes of Worcestershire sauce
Instructions
Simply mix all the ingredients together until well combined. I suggest using your hands for this- it will make for quicker work and it will ensure that all the ingredients get well incorporated into the ground beef.

Form into 4 equal patties and grill until your desired temperature is reached.

Serve on your favorite buns with the cheese, toppings, & condiments of your choice.... Oh, and with a nice cold one on the side. ;)

One of my favorite ways to explore a new city (or as in this particular case, different & new to me parts of a city I already love) is to book a culinary tour with a local tour group. I have hopped on winery tours & the occasional local foods tour, but brewery tours just may be my personal favorite. 

Local breweries have just recently started making a comeback from the days of Prohibition in many cities & areas of the country, popping up in once was industrial neighborhoods of towns & cities. They bring with them not only some tasty & creative local brews, but also have restored a revitalized sense of community & pride in these once forgotten parts of the city. 

Recently, myself & one of my girlfriends booked a brewery tour through TripAdvisor & hopped on with City Brew Tours in Pittsburgh to explore & get a small taste of the local brewery & microbrewery scene in a city that was once the heart of the steel industry of America...

If there are two things that you all know that I love, it is bacon and craft beer.  And bread.
I love bread too. ;)
And yes, I know that they are not necessarily always the healthiest options, but as I always say- all in moderation, folks.

I love, love, love beer bread. (See my Homemade Peanut Butter Beer Bread for a tasty example of my adoration for it.)  But what I don't love is how long it takes to bake... close to an hour! Sometimes I just can't wait that long for some beer bread goodness, so I took matters into my own hands and came up with these beer bread drop biscuits.  And I threw some crispy bacon in there just for good measure...  ;)

Booze & Brews with a View: 8 Must-Visit Wineries & Breweries in Loudoun County, Virginia

It doesn't matter if you are wine lover, a craft beer connoisseur, or if you happen to appreciate small batch spirits- you can craft the perfect booze-filled itinerary in Loudoun County, Virginia...

After almost a year of Covid-induced homebody-ness, I was finally ready to venture out on a girls' trip last month. A little road trip to one of my favorite areas of Virginia became the obvious choice for our first girls' getaway in over a year. Not only is Loudoun County home to some of the best wine country in the state of Virginia, but their local foodie scene has recently seen an explosion in growth when it comes to locally owned and operated breweries and distilleries as well. 


It doesn't matter if you are wine lover, a craft beer connoisseur, or if you happen to appreciate small batch spirits- you can craft the perfect booze-filled itinerary (responsibly, of course!) in Loudoun County, Virginia. Loudoun County boasts over 30 breweries, almost 40 wineries, and about 7 distilleries & cideries, but that number continues to grow every year.


While our two and a half day girls' getaway didn't allow us to try every winery, brewery, and distillery in the county, we did get to visit at least 8 on the list. All 8 of these wineries & breweries (plus 1 distillery!) had to meet certain discerning criteria to make it on our girls' trip list ;) :

  • They had to have plenty of outdoor spaces and seating. I mean, what is seriously better than being able to sip on a glass of pink bubbles or enjoying a cold draft beer on a patio or deck?
  • They had to be locally owned and operated.
  • And being nestled in the rolling, green foothills of the Shenandoah, a beautiful view was definitely a must!

Beer Cheese Risotto with Bacon {GYCO ~ Beer}

I have some redeeming to do for this month's Get Your Chef On Challenge from Julie at White Lights on Wednesdays and Jen from Four Marrs and One Venus.  I totally skipped out on January's challenge after winning the GYCO title in November for my Cranberry Cheesecake Ice Cream.  January's ingredient was pears.  
Pears.  I have no idea why, but my mind just completely blanked.  Maybe it was too much champagne on New Year's?  ;) But I just couldn't come up with a pear recipe I would be proud to enter for the life of me.

Then Julie announced March's ingredient... BEER.  
Beer I can do.
Beer could be my redeemer, maybe even my chance to reclaim the GYCO title? 

My inspiration for my Beer Cheese Risotto with Bacon came from our favorite appetizer at our favorite restaurant to eat at when we are in the Pittsburgh area- the Beer Belly fries smothered in Beer Cheese & Peppered Bacon from Bocktown Beer and Grill.
Yeah, I am sitting here drooling now daydreaming about those fries, and their Three Rivers Burgher, and that vast & amazing selection of craft beers...
*sigh*

What you will need:
4 cups of chicken broth
1 cup arborio rice
1 small onion, chopped
1 tbsp olive oil
1 tbsp butter
1 cup of beer + a splash (I would suggest a pale ale.  I used Saranac Pale Ale in my risotto.)
4-5 slices of bacon
1/2 cup shredded cheddar cheese + 1 tbsp butter
Salt & pepper

Pour the chicken broth into a large saucepan.  Over medium-low heat, start to slowly heat the broth to a low simmer.

Heat the butter and olive oil over medium heat in a large dutch oven.  Once the butter is melted, add the onion and saute for 2-3 minutes until tender.

Add the cup of arborio rice to the onions.  Saute for another 1-2 minutes to slightly toast the rice.

Pour in your cup of beer.  Cook and stir the rice/beer mixture over medium heat until all the liquid is absorbed.  

Using a ladle, scoop in one ladle full of the chicken broth.  Cook and stir over medium-low heat until all the liquid is once again absorbed.  
Continue doing this- ladling in the broth, stirring until absorbed until you have used all the chicken broth.  This entire process should take between 30-35 minutes.
Risotto is a labor of love, folks.  But a labor that is well, well worth it. ;)

In between ladling in chicken broth, cook your bacon strips.  Personally, I am a huge fan of baking bacon.  It is easy.  You don't get splattered with bacon grease trying to flip frying pork.  And your entire house doesn't smell like a grease pit all day.  
Simply line a RIMMED baking sheet with foil, lay out your bacon strips, & place in a cold oven.  Then heat the oven to 425 degrees.  In about 20-25 minutes, you should have crispy perfect bacon.  Easy, peasy!
Again I will stress that you use a rimmed baking sheet & be VERY careful pulling the baking sheet out of the oven so you do not spill any of the grease that has rendered out of the bacon onto the hot oven.  I learned this one the hard way once.   Not a good scene- had to break out the fire extinguisher, the fire department came... 
It was a good time. 

Once your risotto has absorbed all the liquid, remove from the heat and stir in the shredded cheddar cheese and butter.  I also splashed in a little more beer at this point as a finishing touch.  This is totally optional, but I highly suggest it. :)
Season with salt and pepper to taste.

Chop your bacon now that it has cooled.  Dish out your risotto and top with a little shredded cheddar cheese and chopped, crispy bacon.  And there you have it- Beer Cheese Risotto with Bacon!
