One thing that this home cook loves is a good challenge, folks. Especially when said challenge involves food. ;) When Sargento® asked me to participate in their Chopped At Home Challenge, I didn't hesitate to jump right in with a resounding heck yeah. I have been a HUGE fan of the Food Network's Chopped cooking show for years now. If you haven't seen Chopped before, it is wild, you all. Each contestant is given a basket of the same ingredients and challenged to create a course of a meal using all of the ingredients in their baskets. And sometimes they get some crazy ingredient combinations! Each course is judged resulting in one of the chefs getting "chopped" each round until only one chef is left standing at the end of show.

For the Mexican round of the Food Network Chopped At Home Challenge, I was asked to create a recipe using chicken thighs, poblano peppers, corn tortillas, and Sargento 4 Cheese Mexican Blend Shredded Cheese. I am not going to lie- I was pretty excited to see this ingredients list! I knew instantly that I wanted to slow cook the chicken thighs because it happens to be my favorite way to prepare this budget friendly cut of chicken. The slow cooking not only allows the flavor from the bone to really permeate the meat, but it makes the meat so tender & juicy that it literally just falls right off the bone. But it was the corn tortillas that made me decide on a street tacos recipe. I mean, corn tortillas are a must for making perfect street tacos. And I have had a mild obsession with street tacos ever since my husband and I's visit to an amazing little taco shop near Harpers Ferry last month... ;)

Slow Cooker Chipotle Chicken & Poblano Street Tacos

Prep Time: 15 minutes
Cook Time: 5-6 hours
Ingredients (4-6 servings)
  • 4 chicken thighs (2-2 1/2 lbs), skins removed & fat trimmed
  • Salt & pepper
  • 1 tbsp olive oil
  • 2 large poblano peppers (tops cut off, seeds removed, and cut into thin strips lengthwise)
  • 1 large onion, thinly sliced
  • 1/4 cup tequila
  • 2 tbsp brown sugar
  • 1 clove garlic, minced
  • Juice from 1 fresh lime
  • 1 chipotle pepper (from a can of chipotles in adodo sauce), chopped + 2 tbsp of the adobo sauce
  • 1/2 tsp ground cumin
  • 1/4 tsp dried oregano
  • 1/4 tsp ground cinnamon
  • 1 tsp salt
  • 2 bay leaves
  • Corn tortillas
For topping the tacos
  • Sargento 4 Cheese Mexican Blend Shredded Cheese (about 1 tbsp per taco)
  • Fresh lime wedges
  • Fresh cilantro
  • Any other taco toppings that you like (guacamole, salsa, sour cream, etc.)
Instructions
Heat the olive oil in a medium skillet. Season the chicken thighs with salt & pepper. Once the oil is heated, add in the chicken thighs. Brown on each side for 3-4 minutes. Remove from pan & set aside.

While the chicken is browning, slice your poblano peppers and onions. Spray the inside of a 6 quart slow cooker with cooking spray. Add in the sliced peppers & onions to the bottom of the slow cooker. Placed the browned chicken thighs on top of them.

In a small mixing bowl, whisk together the tequila, brown sugar, garlic, lime juice, chipotle pepper & adobo sauce, cumin, oregano, cinnamon, & salt. Pour over top of the chicken, peppers, & onions in the slow cooker. Add in the bay leaves. Cover and cook on Low for 5-6 hours.

Once everything has slow cooked for 5-6 hours, remove the chicken thighs from the slow cooker and let rest for about 5 minutes. Remove the bay leaves & discard. (Leave the slow cooker on the warm setting for now.) Remove the chicken from the bone and shred. Discard any gristle or fat. Return the shredded chicken to the slow cooker with the peppers and onions and stir in combine.

To heat the corn tortillas
Set out a small plate covered with a clean cloth towel. Heat a small skillet over medium heat. Fill a bowl with water and set it beside the stove. Once the skillet is heated, dip a tortilla in the water and then immediately place in the hot skillet. Cook on each side for 1-2 minutes. Once cooked, place the tortilla on the towel lined plate and cover with the towel. Repeat for each tortilla that you need to heat. Once you have your desired number of tortillas cooked, fold the stack in the towel for 3-5 minutes to allow the steam to soften them.

To serve the street tacos
Place about a 1/2 cup of the chicken & poblano mixture into the center of each taco. Top with about 1-2 tbsp of the Sargento 4 Cheese Mexican Blend Shredded Cheese. Serve with fresh lime wedges, fresh cilantro, salsa, guacamole, and sour cream, if desired.

You can serve these street tacos with all your favorite taco fixings, but the smoky & spicy flavors of this slow cooked chicken and poblanos were so flavorful and amazing already that I decided to just simply top them with a little squeeze of fresh lime juice, some fresh cilantro leaves, and the Sargento 4 Cheese Mexican Blend Shredded Cheese. Street taco perfection, friends! :)
