Having grown up in an area with a strong Italian influence, Italian food has definitely become my love language. It means home to me. From antipasto salads topped with lots of hard meats like pepperoni and salami to traditional panzanella salads that make tasty use of day-old loaves of Italian bread, these dishes take me back to my childhood with just one bite. For this simple yet flavorful Antipasto Panzanella Salad, I combined my love of two favorite summertime Italian salads into one big, tasty feast.

There is so much flavor and freshness packed into this salad, folks! It lends itself perfectly to the fresh and ripe flavors of summer like garden fresh juicy tomatoes and crisp cucumbers. This Antipasto Panzanella Salad is the perfect starter or side dish for a summer get-together or barbecue, but it is definitely substantial enough to stand on its own as a light meal...

Antipasto Panzanella Salad

Prep Time: 20 minutes
Cook Time: 10 minutes
Ingredients (Serves 6-8)
  • 3 Tbsp. olive oil
  • 1 (15 oz.) Kroger Bakery Italian Loaf, cut into 1-inch cubes - day old is best, but you can use fresh
  • 1 tsp. kosher salt
  • 4 Roma tomatoes, cut into 1-inch chunks
  • 1 large cucumber, peeled, halved lengthwise and sliced
  • 1/2 red onion, thinly sliced
  • 20 large Simple Truth Organic Basil Leaves, coarsely chopped
  • 3 oz. hard salami, chopped
  • 3 oz. Kroger Sliced Pepperoni
  • 1/2 cup Private Selection Four Leaf Balsamic Vinaigrette & Marinade
  • 8 oz. Ciliegine (cherry size) fresh mozzarella
  • 2 Tbsp. capers, drained
  • 8 to 10 Kroger Pepperoncini
Instructions
Heat the olive oil in a large skillet over medium-low heat. Add the cubed bread and salt. Toast the bread cubes over medium heat, tossing and stirring often until they're toasted and nicely browned, about 10 minutes.

Allow the bread cubes to cool slightly and transfer to a large bowl.
Add the tomatoes, cucumber, red onion and basil leaves to the bowl with the bread cubes. Toss to combine.
Add the salami, pepperoni and vinaigrette. Toss well to make sure the dressing is evenly incorporated.

Transfer the salad to a serving dish or a large salad bowl and garnish with the mozzarella, capers and pepperoncini. Serve immediately. Enjoy!
