Do me a little favor real quick. Take out your calendar or daily planner & draw a big ole heart around today. Why, you may ask? Because today happens to be World Nutella Day. And that is perhaps one of the best food holidays ever created. 

Yes, an entire day dedicated to our love for all things Nutella! Not that I ever need a food holiday as an excuse to indulge in this creamy chocolate hazelnut spread, & I doubt that you all do either. ;) 

One of my favorite ways to enjoy Nutella is by simply dipping pretzels into it. Or by the spoonful straight out of the jar (no shame here, folks!). Not that you would ever need an excuse to whip up some delicious pancakes today, but did you all know that it is International Pancake Tuesday? Yep, folks! International Pancake Tuesday is a thing, and a very good thing at that. ;) It also happens to also be the perfect excuse to serve up a platter of these beautiful Raspberry Swirl Pancakes for breakfast this morning or to plan a belated pancake celebration for the weekend. 

These soft & thick pancakes are hearty from a little whole wheat flour and ground oats.  A touch of tart sweetness is added to them with a fresh raspberry sauce swirl. The only thing that could possibly make these Raspberry Swirl Pancakes even more delicious would be a small dollop of Nutella hazelnut spread to top them off!  The Nutella spread with it's roasted hazelnuts, skim milk, and a hint of cocoa pairs perfectly with the raspberries swirled into these easy homemade pancakes...

Happy February, folks! Did you know that February happens to be National Chocolate Lovers month? I mean, it totally makes sense with Valentine's Day being less than a couple of weeks away. And chocolate definitely speaks the language of love, am I right? ;)





And then we have World Nutella Day on the 5th! An entire day dedicated to celebrating that creamy, chocolaty goodness that is Nutella hazelnut spread. Other than maybe cookie butter, Nutella has be one of the best things ever to come out of a jar.

With the school year about to start back up for us, making time as a family is going to become a little more challenging. And with a three year old and a soon-to-be seventeen year old, finding something we can do together as a family and that we can all actually enjoy can become even more challenging. One thing that we do love to do together? Watch movies! :) 





That is why we try to plan a family movie night at least once a month. Whether it is heading to the theater to catch the new Fantastic Four movie or having a movie night-in, a family movie night is a guaranteed two hours or so of quality time together.





And what is a family movie night without the popcorn? Before our latest movie night-in, I headed to my local Walmart to pick up some of our favorite microwave popcorn- Pop Secret Homestyle Popcorn. While we love Pop Secret as is freshly popped from the microwave, sometimes I like to turn our favorite popcorn into a fun treat for the family. 





Since we are still trying to soak up and enjoy these last few days of summer break, I thought why not combine our favorite movie night popcorn with one of our summertime favorites, s'mores? Buttery popcorn is tossed with creamy Nutella, crunchy graham cracker pieces, and mini marshmallows in this Nutella S'mores Popcorn...

For years, I have been celebrating St. Patrick's Day without giving it very little thought as to why. I mean, I am not Irish. (There may be a teeny fraction of a percent of Irish blood in me somewhere. ;) ) I am not Catholic. I have never even traveled to Ireland. But without fail it is a holiday that I gleefully and willingly take part in year after year. 





In my younger years, St. Patrick's Day was a blur of green beer, dancing to bands with Irish sounding names, and seeking out the nearest local "Irish" pub. In more recent times, it has become the perfect excuse to enjoy some of my favorite Irish-inspired foods. 





It wasn't until this past week that I actually asked myself why. Why do we- Americans who may be 100% Irish or 100% not Irish- celebrate St. Patrick's Day each and every year? The former history teacher in me got the better of me, and I did a little researching...

Banana Chocolate Chip Cake with Nutella Cream Cheese Frosting

This is literally a recipe I just stumbled upon in my Drafts last week.  I originally shared it as a guest post on Pamela's Heavenly Treats some time last year.  I had every intention of posting it here to my blog for all of my readers to see as well- I mean, it is entirely too good not too share with you-  but it must have got lost in my jumble of Draft posts.  Am I the only blogger with a jumbled mess of half finished Draft posts?? ;)

I don't know about you all, but it seems like every time I buy bananas I will undoubtedly have at least two that will get all brown and mushy.  We all know that the brown and mushy ones are perfect for banana bread.  But let's get real here... how much banana bread can we REALLY make in a month? ;)  I am always looking to do something a little different with my overripe bananas.  Recently I came up with the idea for a Chocolate Chip Banana Cake with a Nutella Cream Cheese Frosting.  

What you will need to make some for yourself:

For the cake-
3/4 cup wheat flour
3/4 cup white flour
1/3 cup sugar
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1 tsp vanilla
2/3 cup light sour cream
1/3 cup canola oil
2 ripe bananas, mashed
1 egg
1/2 cup chocolate chips
For the frosting-
4 oz of 1/3 less fat cream cheese
2 tbsp butter, softened
1/2 cup Nutella
1/4 tsp cinnamon
1 1/2 cups powdered sugar

Preheat your oven to 375 degrees.  In a medium bowl, whisk all the dry ingredients together- the wheat flour through the cinnamon.  Set aside.  In a large bowl, beat all of the wet ingredients- the sour cream through the egg- until well mixed.  Beat in the dry ingredients mixture into the wet ingredients mixture a third at a time, until well incorporated.  Mix in the chocolate chips.

Pour the batter into a greased 9x9 baking pan.  Bake for 25-30 minutes, until a toothpick through the center comes out clean.  Allow the cake to cool completely before frosting.

To make the frosting, beat the cream cheese, butter, and Nutella in a medium bowl until well mixed.  With your mixer on low speed, add the powdered sugar and cinnamon.  Beat until the frosting is smooth and creamy.

Once your cake is cooled, frost it with your Nutella Cream Cheese Frosting.  Cut and then serve!

    Come on...  do chocolate chips really need their own holiday? 
    Like we are going to forget they exist or something....  





    I am pretty sure we dip into that bag of chocolate chips in our pantry almost every single day. And it seems like I am buying a new bag at the grocery store every week.





    But hey? Chocolate Chips have their own day, so let's celebrate and take full advantage!

    I know the first official day of fall is just right around the corner, and that probably means I should be sharing something pumpkin spice or apple... but you know what? It's 2020, so anything goes! ;)

    Pinspiration in the Kitchen- "The One" Chocolate Mug Cake

    I don't think it is any big secret now that I possess a mean sweet tooth.  This chocolate mug cake from Budget Bytes has become a staple in my home over the past couple of months...

    This recipe is so crazy simple and actually quite versatile.  We favor our chocolate mug cakes with a big spoonful of peanut butter and few chocolate chips plunged into the middle, but jams and jellies are also pretty yummy. ;)  And Nutella would probably be crazy good... Oh, the possibilities with this one!

    Prep time through the 1 minute microwave cooking time is less than 5 minutes!  Everyone gets their only little moist chocolate cake in their own mug with whichever filling they prefer.  We often top ours with a little dollop of whip cream.  It is perfect when we are short on sweets in the house, and just need a little something.  Plus, it is ridiculously budget friendly.  ;)

    I think by now that it is no big secret to you all that I love me some Baileys Irish Cream. ;) I love adding a splash of it to my coffee or hot cocoa on a cold winter night or drinking it straight over ice after a particularly long day.
