Cubby's Oh Coconuts! Dip with "Gold Doubloon" Vanilla Wafers

If you happen to have a kiddo in your house (or even a grandchild or niece or nephew) under the age of five, then you probably already know all about Disney Junior, am I right? I have to admit that Little Miss has more or less grown up watching it. Not in the sense that I have just plopped her down in front of the television since birth & let Mickey, Sophia, Doc, & Jake raise her for me. But most days we just leave it on Disney Junior as we go about our day whether we are actually watching it or not. In fact, I oftentimes forget that it is still on hours after I have dropped my little one off at preschool for the morning. (Now I know I am not the only parent who has done this. ;) )

One of her favorite shows on Disney Junior has always been Jake and the Neverland Pirates. For those of you not familiar with the show, Jake & his band of pint sized pirates (aka, Cubby & Izzy) spend their days in Neverland committing good deeds, collecting gold doubloons for their team treasure chest (which they earn from the aforementioned good deeds & for completing challenges), and foiling the sneaky plans of Captain Hook and his band of bungling pirates. And yes, every once in a while Peter Pan himself and Tinkerbell make an appearance. This Oh Coconuts! Dip was created in honor of Cubby. Cubby is one part of the lovable pirate trio who is the keeper of the map of Neverland, has an affinity for collecting coconuts, and at times can be a little clumsy which results in him exclaiming, "Oh coconuts!" quite often during the show... :)

Cubby's Oh Coconuts! Dip

Prep Time: 10 minutes
Cook Time: 5-10 minutes (for toasting the coconut if you are not buying it already toasted)
Ingredients (Serves 8-10)
  • 8 oz cream cheese, softened
  • 4 oz whipped topping, thawed
  • 1/4 tsp coconut extract
  • 1/2 cup crushed pineapple, drained
  • 1/3 cup powdered sugar
  • 2/3 cup toasted coconut flakes or chips (plus about 2 tbsp more for topping the dip)**
For the "Gold Doubloon" vanilla wafers
Instructions
In a large mixing bowl, beat together the cream cheese, whipped topping, coconut extract, pineapple, and powdered sugar until nice and creamy. Fold in the 2/3 cup toasted coconut. Cover & refrigerate at least 1 hour before serving.

To make the "Gold Doubloon" vanilla wafers
Place the vanilla wafers in a single layer on a large sheet of parchment paper. Spray them with the Wilton's Color Mist, and allow to dry. Spray with one more coat of the color mist and allow to dry completely.

To serve
Top the coconut dip with the reserved 2 tbsp of toasted coconut. Serve with the "Gold Doubloon" vanilla wafers. Enjoy!

Cover & refrigerate any leftovers for up to 3 days.

**To toast the coconut, preheat your oven to 325. Line a baking sheet with parchment paper and spread the coconut flakes on it in an even layer. Bake for 5-10 minutes, mixing once or twice. Be sure to check it every couple of minutes! Coconut can burn quickly if left unattended. Allow to cool completely before folding into the dip.

You only need two ingredients to make these fun "Gold Doubloons" for dipping.

I actually came up with the idea for this dessert dip for my daughter's fourth birthday which was Jake and the Neverland Pirates themed (I will be sharing the party details on the blog next week, so stay tuned for that.) I knew vanilla wafers would be perfect for dipping with this, but when I spotted Wilton's Color Mist in Gold a light bulb went off! Why not spray the vanilla wafers gold and call them "gold doubloons"? :)

Even if you have no idea who Jake and the Neverland Pirates are or have never heard Cubby exclaim "oh coconuts!", this dessert dip is definitely a must-make. You can't beat this sweet & creamy dip brimming with pineapple and lots of coconut flavor. One taste can instantly transport you to a tropical island... or maybe to the island of Neverland. ;)
