While I may not be emotionally and mentally prepared just yet to tackle the 2016/2017 school year, I am already thinking ahead to those school lunches I will be packing up for the kiddos in less than a month. The challenge is to come up with delicious & easy lunch ideas that are not only fun & kid approved, but that also get the mom seal of approval for being healthy & filling. These quick & tasty Lunchbox Pizza Rollups are sure to receive a double thumbs up from both the kiddos and the parents... :)
My son can easily whip up two of these to toss into his lunch, and they keep him fueled up and focused for his afternoon classes straight through cross country practice thanks to the 8+ grams of high quality protein in each of these tasty rollups. And bonus? Both of my kiddos are meeting at least 1 of their 3 daily recommended servings of low fat or fat free dairy foods when I drop one of these into their lunchboxes.
Lunchbox Pizza Rollups

Prep Time: 5 minutes
Cook Time: None
Ingredients (1 rollup (serves 1))
- 1 Park Skim Mozzarella Cheese Stick
- 1 1/2 tbsp of your favorite pizza sauce
- 6-7 slices of turkey pepperoni
- 1 (10") whole wheat soft tortilla
Instructions
Lay the tortilla flat. Spread pizza sauce over the tortilla starting with the center and then spread out to about 1 inch from the edge of the tortilla on all sides. Top the sauce covered tortilla evenly with the pepperoni slices. Place the unwrapped mozzarella stick at one end of the tortilla, and then roll. Pop it into a sandwich bag or wrap with plastic wrap and pop into the lunchbox.

Note: Feel free to make two of these to put into older kids' lunches.
