I have no clue why it has taken me so long to jump on the sheet pan dinner bandwagon. I mean, you just need one pan, some meat & veggies, & a little seasoning, and voila! Add a loaf of crusty bread or a salad (or both), and dinner is served. :)





But perhaps the best thing about sheet pan dinners is that they require only one baking sheet. Line it right, and you don't even have to worry about washing the pan once dinner is over. Just take the foil or parchment paper off & put that sheet pan right back on the shelf.





For my first ever sheet pan dinner recipe on the blog, I decided to keep it super simple with a 2 ingredient sauce for the chicken & veggies. You just need a jar of prepared basil pesto (homemade pesto will also work for my over-achievers out there ;) ) and your favorite white wine.

I went for a variety of springtime veggies in this recipe- asparagus, Brussels sprouts, & baby carrots, but you can really use just about any vegetable in this dish. Whatever is in season at the local farmers market or is on sale at the grocery store will work in this.

Be sure to use a drier white wine in this like a Chardonnay or Pinot Grigio. I wouldn't recommend using a sweeter white for this recipe. 





And be sure to pick a wine that you would enjoy drinking since you only need a half cup of it for the actual recipe. I mean, there is really no point in letting the rest of the bottle go to waste- am I right? ;)

A few tips for this dish:


  • I used boneless chicken breasts in this recipe, but feel free to swap in chicken thighs instead for a more budget friendly option. Just note that you make have to add an additional 5-10 minutes to the bake time for bone-in chicken.
  • Feel free to sub in other veggies for this dish. Instead of asparagus, try green beans. Instead of the Brussels sprouts, try broccoli florets or cauliflower. Instead of the baby carrots, swap in parsnips or zucchini. You could even do new potatoes in this. Just be sure to cut them in half for a more even baking time with the rest of the ingredients.
  • Don't want to use white wine? Substitute 1/4 cup of balsamic or white wine vinegar instead.
  • For added flavor, sprinkle the chicken & veggies with grated or shredded Parmesan cheese and some chopped fresh basil after you have taken it out of the oven.
