I have to be honest- I had never really tried soba noodles until I had decided to create this cold noodle salad recipe that I am sharing with you all below. And now I am wondering why I had waited so long to try them! 


I used Roland® Organic Soba Noodles in this simple recipe. Roland Foods soba organic noodles are imported directly from Taiwan as part of their line of global specialty products. Although I used them in a cold salad recipe, Roland Foods Asian Noodles are also perfect for adding to hot dishes like stir fries and soups.


Cooking them is super simple too. Just bring 6 cups of water to a boil and then stir in the soba noodles. Bring back to a boil and then lower the heat and simmer until tender, about 3 minutes. Simply drain and then rinse with cold water.
