In case you all didn't get the memo yet, Christmas is less than one week away! And surprisingly, I am not in panic mode right now. For once, I was on top of it all this month. 








The gift shopping & cookie baking are all squared away. The Christmas cards were sent out over a week ago (pssssttt... usually I don't get around to getting cards sent out at all, so this is truly a Christmas miracle!). I have even met all of my holiday deadlines for the blog. 








In fact, this *might* be my last blog post of 2018. But I may end up churning out at least one more post for you all before we say hello to 2019. ;) Stay tuned, folks...

In case you all haven't been keeping track, we are just 11 short days from Christmas. I can happily claim that most of my holiday gift shopping is done. We wrapped up a majority of our cookie baking over the weekend. 









The tree is trimmed. The stockings are hung. Now I am all about focusing on adding the extra finishing touches to make sure this coming Christmas is just as special (if not more so!) than the last.




One way that I like to easily do that is by ordering and having a fresh festive floral arrangement from Teleflora delivered right to my front door. About a week ago I ordered the Send a Hug Open Sleigh Ride bouquet. I just couldn't resist the super cute sledding snowmen! :) 









Being the frugal foodie that I am, I love finding ways to repurpose a fresh floral arrangement and its vase. The little snowmen served as the inspiration for this Snowball Donut Hole Bouquet.

Okay, folks. Christmas is just 18 days away. We brought home the tree yesterday and spent the evening decorating it with keepsake ornaments, and glittery bulbs, and lights. 









The stockings have been hung. The North Pole has more or less thrown up all over my home, inside and out. It is officially go-time. ;) 









If your home happens to be anything like mine on Christmas morning, the kiddos are usually up with the very first crack of sunlight at dawn.... even the teenager. 









We spend the morning unwrapping gifts, prying thousands of twist ties and other means of plastic entrapment from packaging, and then dive into the stockings last. By the time that our living room has been left in a mess of crumpled paper and bows, we are famished and ready for a special Christmas morning breakfast








Every Christmas I try to do something special and festive (and easy!) for breakfast that morning. 









This year I am taking a cue from one of our favorite warm & cozy holiday beverages with these Peppermint Hot Cocoa Pancakes. Am I the only mother who happens to have this far fetched fantasy of having her family sit down to a perfectly prepared holiday breakfast before the gift unwrapping frenzy begins each Christmas morning? I mean, honestly it is a fantasy. And maybe just a little cruel to the kiddos to do so too. ;)

But even when I know that I will be up before the crack of dawn on the 25th.  And I know that there is no way my kids (and perhaps even my husband) would sit down to a nice family breakfast without scarfing their food down just so they could get to those presents quicker, I still would like to prepare a special breakfast for Christmas morning without missing all of the gift opening to do so.

While I love making stacks of homemade pancakes for my family, let me be honest for a second- it gets a little time-consuming standing there flipping pancakes. 








Christmas morning is just one of those mornings when you do not want to be stuck in the kitchen any longer than you have to, am I right?

Cranberry White Chocolate Chip Eggnog Muffins

I find that people usually have pretty strong opinions when it comes to eggnog- they either love it or they hate it. There rarely seems to be a middle ground when it comes to this popular holiday flavor. 







I think that maybe I do fall into that all too rare middle ground here. I wouldn't say I love it, but I also definitely don't hate it.







I mean on the one hand, I do like the flavor. But I can't go for the traditional stuff with the raw eggs and rum and all that. I also don't prefer to go all dairy since my lactose intolerance isn't too cool with that option. 







The flavor of eggnog also happens to bring back a little holiday nostalgia for me. When I was a kid, we used to go to my grandparents' house every Christmas Eve for dinner and my grandma always set out a punch bowl of eggnog (non-alcoholic, of course). 



Before I was aware of my slight lactose intolerance or that such a thing even existed, I used to ladle myself cups of it to drink all evening until I almost sick to my stomach. Oops.







But I do like the occasional glass of soy or coconut milk eggnog with a little splash of whiskey while I am wrapping gifts or baking cookies during the holiday season. Picture this for one second, folks- it is the morning after Christmas Day. You are up early, and the house is quiet. The kids are sleeping in after waking up super early the morning before to raid the gifts under the tree. 







You have a cup of coffee brewing & are just enjoying the stillness of the morning after the Christmas craziness of the day before. The only thing missing is a warm plate of french toast sitting in front of you.







But you don't want to drag out everything to make french toast. Or stand over the stove flipping the egg soaked pieces of bread. Plus, the delicious smell of homemade french toast is just sure to wake up the entire family, and there goes your much deserved quiet morning to yourself.







But wait! I have the perfect solution for this little day after Christmas dilemma of yours. ;) How about french toast just for one that you can make in your microwave?

Strawberry Cheesecake Waffles

One of my family's all time favorite decadent breakfast treats when we eat out at a certain restaurant that may or may not be international and houses pancakes, is their New York Cheesecake Pancakes with strawberry topping.  I am usually the girl who orders eggs, bacon, and hash browns with biscuits when we go out.  Not the pancake girl.  But I cannot help but order these every time we go there which isn't often enough. (And shhhhh... just zip it about the crazy number of calories in that breakfast, k? ;) )

My husband and I didn't do much for each other in the way of Christmas gifts this year, but I did have one lovely surprise waiting for me under the tree Christmas morning- a brand spanking new waffle maker! 
Thus was born the idea for trying to recreate what they do so well with those cheesecake pancakes, but in waffle form. 

What you will need:
For the cheesecake waffles:
4 oz. cream cheese, softened slightly (I used 1/3 less fat.)
1/2 tub of Cool Whip (I used Lite.)
1/2 tsp vanilla
1/4 cup sugar
1/4 cup sour cream
1/4 cup graham cracker crumbs
Enough waffle batter for 4-5 waffles (I used a box mix. You could also use your favorite homemade recipe.)

For the strawberry topping:
2 cups of fresh strawberries, hulled & sliced
1/3 cup sugar
1 tbsp cornstarch
1/2 tsp vanilla

Line a 9x9 glass pan with parchment paper, allowing a couple of inches of paper to hang off either side.
In a medium bowl, beat together the cream cheese and sugar.  Add in the Cool Whip, vanilla, and sour cream and beat until smooth and creamy.  
Spread the cheesecake mixture into the prepared pan.  Sprinkle the entire top of the cheesecake with the graham cracker crumbs.  
Place in the freezer overnight.

The next morning, whip up your waffle batter.  
Take your frozen cheesecake and remove it from the pan using the parchment paper.  Peel the parchment paper off and cut the cheesecake into bite sized squares.  

When I originally made these, I just dumped all the cheesecake pieces into the batter and mixed them in.  This was okay for the first two waffles, but by the third and the fourth most of the cheesecake bites had softened and were melting into the batter.  If you like having the nice little chunks of cheesecake to bite into in your waffles, I would suggest to scooping out the batter you need for one waffle into a separate bowl and then mixing in 1/5 of the cheesecake pieces into the batter right before pouring it onto the waffle iron.  Keep the remaining cheesecake pieces in the freezer until you are ready to make the next waffle and then just repeat the same process again.

While the waffles are "ironing", make the strawberry sauce to go over top of them.  Combine the strawberries and the sugar in a small saucepan.  Cover with 1/3 cup water.  Heat until boiling.  Turn down the heat.
Mix your cornstarch with 2 tbsp of water in a small bowl.  Pour into the saucepan with the strawberry mixture and mix.  Heat over medium heat for another 3-4 minutes, until thickened.  Remove from heat and stir in the vanilla.

Spoon some of the strawberry topping over your waffle and finish with a dollop of whipped cream.  Happy brunching! :)
